Tasting notes
Colour
The luminous colour reveals subtle hues evolving towards golden tones.
Nose
Beautifully complex, the nose opens with citrus notes of lemon and lime, intertwined with white tea and white flower aromas. Delicate touches of toasted bread, derived from barrel ageing, enrich this bouquet, which unveils itself in layers.
Palate
The palate seduces with its balance between a lovely fruity sweetness and a mouth-watering acidity typical of its clay-limestone terroir. Vanilla and oaky notes blend harmoniously with the overall freshness. A fine bitterness stretches the finish, offering lovely persistence to this wine full of charm and vitality.
Food and wine pairing

The elegance and minerality of a Saint-Aubin Premier Cru
The estate
Founded in 1859 by Jean-Edouard Dupard, a master cooper, the Jean Chartron estate is a historic figure of Burgundy, established in Puligny-Montrachet. Today, the fifth generation, embodied by Jean-Michel Chartron in charge of winemaking and his sister Anne-Laure overseeing the vineyards, runs this 14.5-hectare estate. Certified High Environmental Value (HVE), the estate stands out for its minimal-intervention approach and deep respect for terroir, elevating its cuvées among the essential references of the Côte de Beaune.
The vineyard
The Saint-Aubin 1er Cru "Perrières" comes from a terroir situated on steep slopes between 300 and 350 metres in altitude, benefiting from a beautiful south-facing exposure. The soil, particularly stony and rich in white clay and limestone, offers excellent drainage. The vines receive rigorous care and are entirely hand-harvested to ensure optimal grape quality.
The vintage
The year 2023 was marked by demanding weather conditions, with high temperatures and moderate water stress. A carefully chosen harvest date allowed for prioritising the physiological ripeness of the grapes rather than an excessive accumulation of sugars.
Winemaking and ageing
Winemaking takes place with minimal intervention. Alcoholic fermentations, using indigenous yeasts, occur in oak barrels and half-muids. After malolactic fermentation accompanied by light stirring of the lees, the wine is aged in temperature-controlled cellars. A light filtration without fining precedes bottling.
