Tasting

Colour
Of beautiful clarity, the wine reveals a golden-yellow hue with brilliant highlights, testifying to its fine evolution.

Nose
The aromatic bouquet seduces with its complexity, blending fragrances of honey, toasted almond and white flowers, underpinned by a delicate mineral touch.

Palate
The attack is broad and generous. The palate reveals a silky texture and a fine tension, offering flavours of white-fleshed fruit and subtle buttery notes. The finish is persistent and remarkably elegant.

Food and Wine Pairing

This great white wine will pair wonderfully with noble shellfish such as roasted lobster, poultry in cream sauce, or well-aged cheeses such as an old Comté.

Serving and Cellaring

The Estate

Founded in 1880, the Joseph Drouhin House has established itself as an unmissable reference within its region. Initially a wine merchant, the estate transformed into a wine-growing domaine under the impetus of Maurice Drouhin. Now led by the fourth generation, the family carries on a historic expertise. A pioneer of organic and biodynamic viticulture for many years, the domaine oversees a vast vineyard. The house is distinguished by its constant quest for authenticity, producing cuvées that faithfully express the subtlety of their terroirs.

The Vineyard

The Clos des Mouches vineyard is located at the southern end of the Beaune appellation. This historic terroir benefits from an ideal east and south-east facing exposure, offering optimal sunshine. The soils consist of rocky elements in the upper section, while the centre reveals a structure of limestone and marl, promoting excellent drainage. Cultivated according to biodynamic principles, the vines receive careful attention, including the use of natural preparations to encourage deep rooting.

The Vintage

The year 2001 proved particularly challenging from a weather standpoint. The growing cycle began with a prolonged flowering, leading to disparities in ripeness. The summer was marked by alternating rainfall and brief spells of heat. These climatic conditions required an extremely rigorous selection during the harvest to retain only the healthiest and most balanced grapes.

Winemaking and Ageing

The domaine's philosophy favours measured interventions to preserve the expression of the fruit. Fermentation is triggered by the indigenous yeasts naturally present on the grapes. For this white wine, pressing is carried out gently to preserve the integrity of the grapes. The wine is then aged on the lees in French oak barrels, the wood having been air-dried beforehand for three years. This method allows the wine to develop while retaining its natural freshness.
