Tasting
Color
The color displays a pale gold hue, clear and bright, enhanced by golden reflections.
Nose
The bouquet is initially discreet, revealing aromas of white-fleshed fruits such as pear and peach. After oxygenation, the nose becomes more expressive, unveiling subtle woody notes reminiscent of coconut.
Palate
On the palate, the attack is broad and perfectly balanced, supported by a lovely structure. Oak influence appears on the finish, accompanied by good length and delicate saline notes. This premier cru stands out for its elegance and characteristic minerality.

The estate
Created in 1923 at the initiative of Abbé Balitrand, La Chablisienne is a wine cooperative located in Chablis in Burgundy. Bringing together growers from 17 villages in the Serein valley, it produces over 25% of Chablis’s volume exclusively from Chardonnay. Its uniqueness lies in collecting musts rather than grapes, allowing total control over winemaking. A member of the GIE Blasons de Bourgogne since 1993, this pioneering cooperative celebrated its centenary in 2023, establishing itself as the undisputed leader of the appellation thanks to its Kimmeridgian limestone soils that impart distinctive minerality to its wines.
The vineyard
The vineyard of the Chablis premier cru "Les Lys" extends over the left bank of the Serein in the commune of Chablis, with a northeast exposure. The plots, averaging 25 years in age, rest on Kimmeridgian clay-limestone soils characteristic of the appellation and are adjacent to the Chablis premier cru Vaillons.
Winemaking and aging
The winemaking of this Chablis 1er cru begins with static cold settling before fermentation. Alcoholic and malolactic fermentations take place in both tanks and barrels. The aging continues for about 12 months on fine lees, divided between tanks and barrels, allowing the wine to develop its complexity while preserving its characteristic freshness.
