Tasting
Colour
This red wine reveals a light ruby colour, subtly tinged with garnet hues.
Nose
Beautifully complex, the aromatic bouquet opens with notes of fresh cherries and raspberries. It then reveals hints of well-ripened black fruits such as blueberry, harmoniously underscored by delicate nuances of herbs, spices and a subtle undertone of leather.
Palate
The attack offers a precise balance between generous substance and great textural finesse. The tannins are smooth and delicate. The finish, beautifully persistent, lingers on mineral and spicy notes, enhanced by a touch of citrus bringing pleasant freshness.
Food and wine pairing
This cuvée pairs wonderfully with roasted white meats such as squab or free-range poultry, as well as grilled or braised red meats. It will also beautifully complement small game dishes, poultry liver terrine, truffle-based dishes, or semi-firm cheeses with herbaceous notes.
Service and storage
To fully release its aromas, it is recommended to decant this Morey-Saint-Denis 1er cru "Clos des Ormes" 2022 before serving. This wine can age favourably in the cellar until around 2037, provided it is kept in complete darkness at a constant temperature between 10 and 14°C.
The authentic expression of a Burgundy terroir by Lucien Le Moine
The estate
Founded in 1999 in Beaune, at the heart of Burgundy, the house of Lucien Le Moine is the fruit of the passion shared by Mounir Saouma and his wife Rotem Brakin. Operating as a micro-négoce, this structure owns no vines but selects the finest grapes from the region with rare rigour. Mounir Saouma and Rotem Brakin craft wines of remarkable purity, seeking to express the unique identity of each cru through bespoke aging.
The vineyard
Located at the foot of the famous Clos de la Roche, the terroir from which this Morey-Saint-Denis originates extends over soils composed of marl and limestone. The vineyard benefits from an oceanic climate with semi-continental influences. To preserve soil structure and prevent erosion, winter cover cropping is rigorously practised, thereby promoting the natural enrichment of the earth.
Winemaking and aging
The hand-harvested grapes include a proportion of whole bunches. The Morey-Saint-Denis 1er cru "Clos des Ormes" 2022 is aged for an extended period on fine lees, punctuated by gentle bâtonnage, in oak barrels. Malolactic fermentation is deliberately delayed until the following summer. Finally, bottling is carried out by gravity, without any prior filtration or clarification, thus preserving the wine's full aromatic complexity.
