Tasting

Colour
The colour reveals a pale golden yellow hue, enhanced by a bright, crystalline appearance.

Nose
Displaying great finesse, the aromatic bouquet reveals lovely complexity. It opens with mineral notes of white stone and floral touches of acacia, before giving way to citrus aromas such as yellow grapefruit, almond, hazelnut and a delicate hint of crème fraîche.

Palate
The palate offers a round, fresh attack, carried by a lovely mineral tension and fine acidity. The structure is linear and precise, stretching towards a long, persistent finish marked by the freshness of citrus fruits and the mineral character typical of its terroir.

Food and wine pairing

This white wine pairs beautifully with seafood such as oysters or scallops, as well as with grilled white fish. It will also enhance white meats served with a creamy mushroom sauce, or delicate vegetables such as white asparagus.

Service and storage

To fully appreciate this Bourgogne Blanc "Cuvée Oligocène" 2022, it is recommended to serve it at a temperature between 10 and 12°C. Approachable from its youth, it has excellent aging potential and can be enjoyed until around 2032.

The Elegance and Mineral Tension of a Chardonnay from Domaine Patrick Javillier

The estate

The family's winemaking history began in 1945, but it was in 1990 that Domaine Patrick Javillier was truly established, with the first estate bottlings. Located in Meursault, at the heart of Burgundy, this 11-hectare estate is now run by Marion Javillier and her husband Pierre-Emmanuel Lamy. Renowned for its philosophy of blending complementary plots, the estate produces wines of great precision. Certified with the High Environmental Value label, the estate strives to express the full complexity of its terroirs.

The vineyard

This Burgundy wine comes from the climat "Les Pellans", located south of the village of Meursault. The 0.75-hectare plot, planted in 1977, sits at an altitude of around 300 metres and benefits from a south-east exposure. The vines thrive on clay soils and brown limestone resting on conglomerates dating back to the Oligocene geological period. The estate favours sustainable viticulture, with exclusively manual harvesting allowing for rigorous sorting of the bunches to preserve biodiversity and the integrity of the ecosystem.

The vintage

The year 2022 will be remembered as one of the region's hottest, recalling the extreme conditions of 2003. Despite this scorching climate and the heat stress endured by the vines throughout the growing season, the harvest yielded berries with an unexpected structure, offering a surprising balance between ripeness and freshness.

Winemaking and aging

After a long, gentle pneumatic pressing, the must of the Bourgogne Blanc "Cuvée Oligocène" 2022 undergoes overnight settling. Alcoholic fermentation is triggered by indigenous yeasts, followed by complete malolactic fermentation. The wine then benefits from extended aging on the lees of 16 to 18 months in oak barrels, of which 25 to 30% are new, accompanied by regular lees stirring to enrich its texture and aromatic complexity.
