This 2020 Bin 407 Cabernet Sauvignon is big and structural—the Cabernet character (the "Cabernosity" of the wine) sits behind a parapet of oak, and the tannins are finely knit and tightly clenched around the fruit. Unpicking the structure from the finish reveals smoked cassis, resinous char, star anise and sticky lamb fat. It's a big-shouldered, muscly wine. This is fierce and concentrated and will live an eon, but in my opinion, it lacks the finesse and poise that I want to see in Cabernet Sauvignon. The oak regimen—15 months in French (24% new) and American (12% new) hogsheads—and regional makeup has something to do with that: McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. There are a lot of good Cabernet regions in there, but in combination, they lose their identities—although, that has long been the appeal with this wine. Choose your own adventure.

The palate glides along a silky, gossamer weave of vivid red and purple berries, and this glorious choir of luscious and supple fruits is supported by just a hint of wild herbs, a sprinkle of chocolate powder and tannins that support the impressive palate length. Strong statement of cabernet is the first impression, with violets, blueberries, blackcurrants, fresh leaves and herbs. I like the clarity here. The palate has such intense and rich fruit, with plush, polished and ripe blueberry and cassis flavors. Holds an impressively measured and balanced stance. A blend of McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. Drink or hold.

Deep magenta. Earthy, smoke- and spice-accented cherry, cassis, licorice and botanical herb qualities on the perfumed nose. Densely packed dark fruit preserve, espresso, coconut and bitter chocolate flavors slowly turn sweeter through the back half. Shows quite backward right now, but there's clearly plenty of deep fruit here. Dusty tannins add grip to the penetrating finish, which hangs on with strong, spicy tenacity. Aged in new and used French and American oak barrels.

The estate

Voted New World Winery of the Year in 2013 by the prestigious Wine Enthusiast magazine, the Penfolds estate had already established itself as an icon of great Australian wines thanks to the unparalleled determination of Mary Penfold in the 19th century. Indeed, the co-founder of Penfolds Winery devoted herself body and soul to crafting exceptional wines. This lifetime of work is reflected in the estate's success in establishing itself as a benchmark among Southern Australia wines. When Max Schubert joined the Penfolds adventure in the 1950s, he breathed the elegance of the great Bordeaux wines that fascinated him so much into the estate's wines. Success was not long in coming when the cellar master signed his famous Grange cuvée which crossed Australian borders to conquer wine lovers around the world.

The wine

This cuvée was launched in 1993 with the 1990 vintage. Crafted in the same way as Bin 707, Bin 407 is a reflection of the finest Cabernet Sauvignons that highlight the varietal's characteristics. The powerful structure, the intense aromatic expression of the fruit as well as refined barrel aging define the profile of these wines derived from "multi-sourcing". The grapes come from several regions of Southern Australia (McLaren Vale, Barossa Valley, Coonawarra, Padthaway, Wrattonbully).

The vintage

Winter and spring were very dry, which delayed flowering and fruit set. The use of irrigation was inevitable; Clare Valley experienced its driest winter in 120 years. Clare Valley, Coonawarra, Wrattonbully, Padthaway and Barossa Valley suffered frosts in September which impacted yields. The 2019 calendar year was the driest recorded in Barossa Valley. Fortunately, McLaren Vale benefited from above-average rainfall in February. The Cabernet Sauvignons were of perfect quality despite very low yields.

Aging

This Australian cuvée is aged for 15 months in 300-liter French oak barrels (24% new wood) and American oak barrels (12% new wood).

Appearance
The color of this cuvée is ruby.

Nose
The varietal aromas of Cabernet Sauvignon express themselves with elegance, confirmed by blackcurrant, blackberry as well as a freshness coming from mint leaves. Savory notes associated with oriental spices. The oak barrels bring touches of coconut, cocoa and cedar.

Palate
Fleshy and generous, such is the personality of this Australian cuvée. Aromas of cherry, cola and sage accompanied by leather are revealed. A beautiful acidity and supple, integrated tannins make this wine balanced. The long finish marks a high-quality wine.

Food and wine pairings

Spiced meats will pair wonderfully with this cuvée.

Service

The ideal serving temperature is between 16 and 18 degrees.

Cellaring
