Tasting
Colour
The colour reveals a delicate pale gold hue, enhanced by bright and luminous highlights that reflect this white wine's remarkable freshness.
Nose
Showing beautiful complexity, the nose opens with a very pure minerality, accompanied by floral notes reminiscent of hawthorn and vibrant hints of citrus. With aeration, it reveals aromas of stone fruit such as apple and pear, enriched by subtle nuances of fresh almond, verbena and a light touch evoking popcorn.
Palate
The attack is lively and direct, leading into a mid-palate structured by saline minerality and a particularly elegant acidity. The texture, of remarkable crystalline clarity, offers a delicate feel that extends into a persistent finish, enhanced by subtle, perfectly integrated oaky notes.
Food and wine pairing
This great white wine from France pairs wonderfully with seafood such as halibut pan-seared in butter, scallops or poached fish with citrus. It will also enhance poultry in creamy sauce, seared foie gras, roasted spring vegetables such as asparagus, as well as mature cheeses like a crottin de chèvre or an aged gruyère.

The estate
Founded in 2016 in Meursault, in Burgundy, the Pierre Girardin estate is now run by Pierre-Vincent Girardin, representing the thirteenth generation of an illustrious winemaking family. Having grown up immersed in this world from a young age alongside his father Vincent, he has developed a remarkable artistic vision and technical mastery. At the helm of a vineyard spanning prestigious appellations, Pierre Girardin stands out for his minimalist approach and environmentally respectful viticulture, combining traditional know-how with modern technology to reveal the most authentic expression of his terroirs.
The vineyard
This wine comes from a tiny 0.25-hectare plot located in the Chassagne-Montrachet appellation, just above the legendary Le Montrachet Grand Cru. East-facing, the vines, planted in 1930, flourish on soils composed of clay and limestone, rich in stony rock. The estate favours vine management that respects natural cycles, applying organic and biodynamic principles, including the use of natural compost and Guyot Poussard pruning to preserve the vines' vitality.
The vintage
2022 offered particularly mild and favourable weather conditions in Burgundy. The growing cycle benefited from a cool climate that allowed for slow, balanced ripening of the berries, ensuring excellent preservation of natural acidity and an optimal expression of minerality.
Winemaking and aging
For the Chassagne-Montrachet 1er Cru "Les Chenevottes" 2022 cuvée, the harvest is carried out by hand with rigorous sorting directly in the vineyard. The whole bunches undergo long, gentle pressing. Fermentation begins naturally thanks to indigenous yeasts. The wine is then aged for twelve months in custom-made oak barrels (10 to 15% new oak), followed by six months' rest in stainless steel tanks. To preserve its full complexity, the wine is bottled without fining or filtration, in keeping with the lunar calendar.
