Tasting notes
Appearance
This white wine reveals a bright, clear robe of a beautiful pale yellow hue adorned with green or golden reflections.
Nose
The aromatic bouquet opens on delicate notes of white flowers such as acacia and hawthorn. It is then enriched with scents of white and yellow stone fruits, such as peach and pear, subtly underlined by touches of hazelnut, fresh butter and fine toasted nuances.
Palate
Lively and energetic, the palate offers a texture that is both full and airy. It stands out for its beautiful saline tension and a very pure chalky minerality, leading to a persistent, fresh and particularly mouth-watering finish.
Food and wine pairings
This wine pairs wonderfully with noble fish such as roast turbot or line-caught sea bass with beurre blanc. It will also enhance shellfish, a seafood risotto, or a roast poultry served with a light cream sauce. As for cheeses, an aged Comté or a summer Beaufort will make excellent partners.
Serving and cellaring
To fully appreciate the Puligny-Montrachet Village "Les Folatières" 2024, it is recommended to serve it at a temperature between 11 and 13 °C. A light decanting of thirty to forty-five minutes may prove beneficial in its youth. This wine can be enjoyed after a few years of patience and will continue to evolve favourably until around 2032.
The purity and energy of a Puligny-Montrachet white wine crafted by Pierre Girardin
The estate
Heir to a long family lineage, Pierre-Vincent Girardin founded the Pierre Girardin estate in 2016. Located in Burgundy, this property quickly established itself thanks to a contemporary and demanding approach. The winemaker, who is the current owner and manager, cultivates around 6.5 hectares of vines on the most prestigious terroirs of the Côte de Beaune, complemented by a vineyard in the Jura. Driven by a deep respect for the environment, the estate favours organic viticulture and minimal-intervention winemaking, thereby revealing the identity of each parcel with great precision.
The vineyard
This wine comes from an exceptionally rare parcel located within the Puligny-Montrachet appellation. Indeed, this cuvée is sourced from a small section classified as village, yet literally enclosed amid vines classified as premier cru, on the famous Les Folatières climat. Facing east and south-east, the vines, more than forty years old, thrive mid-slope on soils rich in limestone residue. The vineyard is managed according to the principles of organic farming, encouraging deep rooting and an authentic expression of the terroir.
Winemaking and aging
The grapes are harvested by hand. In the cellar, the philosophy is one of minimal intervention. The fermentations of the Puligny-Montrachet Village "Les Folatières" 2024 begin naturally thanks to indigenous yeasts. The wine is then aged for twelve months in large oak barrels (456 litres), with a proportion of new wood of around 50%. This wood ageing is followed by an eight-month refining period in stainless steel tanks. Finally, bottling is carried out without any fining or filtration in order to preserve all the substance and texture of the wine.
