The property
The story of the Simonnet-Febvre House begins with Jean Febvre, a cooper in Montbard, who founded it in 1840. At the time, it specialized in the production of "traditional method" sparkling wines. It is still, to this day, the only house in Chablis to produce Crémant de Bourgogne. Taken over in 2003, and now led by Jean-Philippe d'Archambaud, it offers three ranges of wine: Chablis wines, Crémants de Bourgogne, and wines from the Yonne.
The vineyard
Expertise and a demand for excellence: the wines from the four levels of the Chablis appellation reveal a pure and assertive style, faithful to the identity of the terroir. They enhance the characteristic minerality of Chablis, while preserving the unique typicity of the two banks of the Serein, thus offering an authentic and nuanced expression of this exceptional wine region.
The vintage
The 2023 vintage in Burgundy is distinguished by a generous harvest and optimal maturity of the grapes, despite sometimes unstable weather. After a spring marked by a few episodes of frost, the summer, both hot and dry, was tempered by timely rainfall, thus providing ideal conditions for a homogeneous maturation of the harvest. The result is an exceptional vintage, marked by a remarkable harmony between fruit, freshness, and structure. A promising balance that suggests a good aging potential.
