Description
Characteristics and tasting notes for the Cabernet Sauvignon 2023
Tasting
Colour
The colour reveals a deep red hue.
Nose
The aromatic bouquet opens with notes of fresh red and black fruits, reminiscent of redcurrant and blueberry. It is then enriched with spicy touches of thyme, rosemary and cardamom, before finishing on soft nuances of hazelnut cream, vanilla and caramel.
Palate
The attack is juicy, revealing a fine balance between acidity and fruit. The palate unfolds flavours of redcurrant supported by tannins that are both smooth, vibrant and complex, leading to a wonderfully fresh finish.
Food and wine pairing
This wine pairs beautifully with game meats such as wild boar, venison or rabbit, as well as roast lamb or grilled red meats. It also enhances dishes seasoned with aromatic herbs, mature cheeses with character, and desserts featuring dark chocolate and red berries.
Service and storage
With its fine structure, this Cabernet Sauvignon 2023 can be enjoyed now and will continue to develop favourably in the cellar until around 2033.
Other characteristics
This wine has a pH of 3.76 and an acidity of 5.2 g/L, reflecting the fine vibrancy preserved by the altitude.
The elegance and freshness of a great wine from Mendoza
The estate
Founded in 1996 and located at the foot of the Andes mountain range in Argentina, Terrazas de los Andes is a pioneering estate in high-altitude viticulture. Belonging to the LVMH group and now led by Lucas Löwi, this exceptional estate cultivates 550 hectares of vines spread across terraces reaching up to 1,650 metres. Deeply committed to preserving its ecosystem, the estate stands out for its rigorous management of glacier water and its transition towards regenerative agriculture, producing wines from Mendoza that faithfully reflect their mountainous terroir.
The vineyard
The grapes come from more than 25 selected plots across four high-altitude vineyards situated between 1,000 and 1,200 metres. These terroirs are divided between the clay soils of Luján de Cuyo and the limestone-rich lands of the Uco Valley, at the heart of the Mendoza region. The entire vineyard benefits from a high-precision drip irrigation system and a cover crop that promotes biodiversity.
The vintage
2023 proved to be a particularly challenging year, marked by historic frosts, prolonged heatwaves and uneven ripening. In the lower areas, the lack of rainfall led to water stress, concentrating the berries. Conversely, the higher-altitude vines benefited from well-timed rainfall, which helped mitigate the effects of the heat and preserve fine vibrancy.
Winemaking and aging
Harvested early to retain all their brightness, the grapes for this Cabernet Sauvignon 2023 undergo a gentle maceration lasting 15 to 20 days. Aging then takes place over 12 months in used French oak barrels, while part of the wine is kept in stainless steel tanks to preserve the purity and freshness of the fruit.
