Tasting
Appearance
The robe reveals a pale yellow hue adorned with green reflections, likely to evolve towards golden shades over time.
Nose
The aromatic bouquet opens with notes of citrus fruits, such as lemon and grapefruit, intertwined with scents of white flowers and stone fruits. Subtle mineral touches evoking chalk and gunflint enrich the whole.
Palate
The attack is lively and carried by a beautiful acidity. The mid-palate reveals a dense and compact texture, supported by a very present mineral framework. The finish, of remarkable length, extends over chalky and lemony notes, enhanced by a delicate bitterness.
Food and wine pairing
This white wine pairs wonderfully with seafood such as baked turbot, scallops or oysters. It also perfectly accompanies white meats in cream and mushroom sauces, as well as cooked pressed cheeses such as an aged Comté.
Serving and cellaring
To fully appreciate the Pouilly-Fuissé Village "Terres de Pierres" 2025, it is recommended to serve it at a temperature of around 12°C. This wine has a cellaring potential allowing it to evolve favourably in the cellar for approximately five to ten years.
The mineral and taut expression of a white wine from the Mâconnais
The estate
Founded in 1990 by Jean-Marie Guffens and his wife Maine, the Verget House is located in Sologny, in the heart of the Mâconnais in Burgundy. Designed as a "haute couture" négociant, the structure sources exclusively very high-quality grapes. Still led by its founding owner, Jean-Marie Guffens, supported by technical director Julien Desplans since 2012, the house stands out for its complete mastery of the production chain and its low-intervention approach. Its singular talent for elevating Chardonnay notably earned it the title of "Négociant of the Year" in 2020.
The vineyard
The grapes behind this cuvée come from the Pouilly-Fuissé appellation, more precisely from the renowned terroirs of the villages of Vergisson and Fuissé. The vines flourish on slopes with very stony soils, composed of Jurassic limestone and poor marls. This particular geology, combined with varied exposures, gives the berries optimal concentration and a strong mineral identity.
Vinification and ageing
The making of the Pouilly-Fuissé Village "Terres de Pierres" 2025 relies on manual harvesting in small crates, followed by rigorous sorting. Pneumatic pressing, of great precision, allows for the judicious blending of free-run juice and press juice. Fermentations take place naturally thanks to indigenous yeasts. Ageing takes place on the lees, mainly in stainless steel tanks to preserve the tension, complemented by a proportion of used barrels, without bâtonnage.
