Tasting
Colour
A pale yellow hue enhanced by silvery highlights reveals itself in the glass.
Nose
The bouquet opens with aromas of tropical fruits (mango, pineapple) and fresh pear, intertwined with floral notes reminiscent of acacia and honeysuckle. Touches of citrus (orange zest, bitter lemon), minerality and toasted brioche complete this aromatic palette.
Palate
Full-bodied and textured, the attack reveals fresh, vibrant fruit. The mid-palate unfolds flavours of stone fruits (peach, apricot) balanced by a fine mineral tension evoking flint. The finish stands out for its length, precision and citrus notes.
Food and wine pairing
This white wine pairs perfectly with seafood, baked fish or smoked salmon. It also goes wonderfully with poultry in cream and mushroom sauce, sweetbreads, as well as aged cheeses such as Comté or Beaufort.

The authentic expression of Mâconnais terroir by Maison Verget
The estate
Founded in 1990 by Jean-Marie Guffens and his wife Maine, Maison Verget has established itself as a major reference within the vineyards of Burgundy. Based in the Mâconnais, this négociant house stands out for its distinctive approach: close partnerships with winegrowers and a rigorous selection of grapes. Today, Jean-Marie Guffens still leads the estate, supported since 2006 by Julien Desplans, who oversees the winemaking. The estate's philosophy is rooted in a quest for truth and an authentic expression of the terroirs, proving that this region can rival the most prestigious appellations.
The vineyard
Located within the Saint-Véran appellation, in the southern part of the region, the terroir of the village of Davayé rises to around 200 metres in altitude. The vines grow on slopes facing south-east and north-east. The soils, dating back to the secondary era, feature alternating layers of clay, sometimes sandy, interspersed with limestone veins. This cuvée is crafted from a blend of three distinct plots: Pommard, facing north for tension, along with Côte-Rôtie and Chataignier (or Terres Noires), which bring richness. The vines are trained using the traditional Mâconnais "taille à queue" pruning method.
The vintage
The year 2023 was marked by particularly warm weather conditions. This climate encouraged generous fruit ripeness, delivering a rich aromatic profile while also posing a technical challenge during winemaking to preserve balance and freshness.
Winemaking and aging
The winemaking process for the Saint-Véran Village "Terroirs de Davayé" 2023 begins with full fermentation in barrels, triggered by indigenous yeasts. The wine is then aged for four to five months in barrels, with regular bâtonnage to maintain freshness. It is subsequently transferred to concrete tanks, either horizontal or egg-shaped, to continue its maturation. This process, lasting a total of seven to eight months, encourages natural micro-oxygenation and continuous lees circulation before bottling.
