Tasting

Appearance
The wine displays a pale gold to light golden hue, adorned with greenish highlights in its youth, gradually gaining intensity over the years.

Nose
The aromatic bouquet reveals a beautiful complexity, blending aromas of white fruits such as apple and pear, citrus notes like lemon, along with hints of dried fruits, fresh butter and honey. A pronounced minerality, evoking flint, elevates the whole, sometimes complemented by subtle touches of pineapple.

Palate
Ample and generous, the palate stands out for its rich, concentrated texture, perfectly balanced by a saline tension and a firm acidity. Oak ageing brings a delicate woody note that integrates harmoniously with the mineral backbone, delivering a finish of remarkable length.

Food and wine pairings

This great white wine pairs wonderfully with Bresse chicken in cream sauce, pan-seared foie gras, or noble fish in sauce such as turbot or lobster with beurre blanc. It will also enhance aged hard cheeses such as an old Comté or a Beaufort.

Serving and cellaring

For an optimal tasting experience, it is recommended to serve this wine at a temperature between 10 and 12 °C. Built for long cellaring, it will reveal all its complexity after a few years in the cellar and can be enjoyed until around 2039.

Burgundian excellence according to Vincent Girardin

The estate

Founded in 1980 by Vincent Girardin with just two hectares of vines, Maison Vincent Girardin is today an essential reference in Burgundy. Based in Meursault, the estate quickly grew by combining its own vineyard holdings with a haute couture négociant activity. Sold in 2012, it now belongs to the Compagnie des Vins d'Autrefois, chaired by Jean-Pierre Nié. Under the technical direction of Éric Germain, the estate upholds an environmentally respectful philosophy, free from herbicides and insecticides, in order to express all the purity of its great terroirs.

The vineyard

The Corton-Charlemagne Grand Cru comes from a plot of approximately two hectares located on the famous hill of Corton, near the village of Aloxe-Corton. Facing south and southeast, at an altitude ranging from 250 to 330 metres, the vines, about fifty years old, thrive on soils composed of hard limestone, marl and gravel. The vineyard is cultivated according to rigorous principles, without any chemical weed killers, with deep ploughing and controlled yields to guarantee optimal concentration in the berries.

Winemaking and ageing

After hand-harvesting and a meticulous double sorting, the grapes undergo gentle pneumatic pressing. Alcoholic and malolactic fermentations take place naturally thanks to indigenous yeasts. The wine is then aged on fine lees for about 18 months in 228-litre French oak barrels, of which 30% are new, with regular bâtonnage. The final blending takes place in stainless steel tanks one month before bottling, which is carried out according to the lunar calendar, on root days.
