Description
Characteristics and Tasting Tips for the Chablis 1er cru "Beauroy" Domaine 2024 by William Fèvre
Tasting
Appearance
The colour is a pale yellow with green highlights in its youth.
Nose
The nose opens with citrus aromas such as lemon and lime, accompanied by notes of green apple, pear and peach. Delicate touches of white flowers and honeysuckle complete the bouquet.
Palate
On the palate, this white wine stands out for its silky, caressing texture. The whole is perfectly balanced by vibrant acidity and lovely energy, stretching into a persistent, subtly saline finish.
Food and wine pairings
This wine pairs ideally with seafood such as oysters, or shellfish such as lobster. It is also a wonderful match for white fish in creamy sauces, white meats such as poultry with morel mushrooms, and pressed cheeses such as a young Comté.
Serving and cellaring
Enjoyable in its youth for its fruit, this Chablis 1er cru "Beauroy" Domaine 2024 can also be cellared for approximately 5 to 8 years to develop more complex notes.
The Elegance and Minerality of a Chablis Premier Cru
The estate
Founded in 1957, Domaine William Fèvre is an essential reference in Burgundy. Extending over approximately 70 to 78 hectares, the estate owns the widest range of Grands Crus in its appellation. A pioneer in environmental practices, it holds HVE Level 3 certification and applies organic and biodynamic methods on its finest terroirs. Since the beginning of 2024, the estate has belonged to Domaines Barons de Rothschild Lafite. Technical management is overseen by Didier Séguier, who ensures perfect consistency between the work in the vineyard and in the cellar.
The vineyard
This Premier Cru from Chablis comes from the Beauroy climat, located on the left bank of the Serein. More precisely, the grapes originate from the prized sector of Troësmes, which faces south and south-west. This sun-drenched terroir rests on typical Kimmeridgian soils, made up of marls and limestone rich in marine fossils. The estate farms three plots there, two of which are planted with old vines aged 50 to 60 years. Harvesting is carried out by hand and often early, in order to preserve all the freshness of the berries.
Winemaking and ageing
The hand-harvested berries undergo a gentle pressing. Fermentation of this Chablis 1er cru "Beauroy" Domaine 2024 takes place in stainless steel tanks and used oak barrels, with new oak strictly avoided to preserve the purity of the fruit. Ageing continues on the fine lees for 10 to 15 months, with regular lees stirring to give the wine texture. Gravity is used wherever possible throughout the process in order to limit oxidation.
