This Blanc de Noirs lends itself readily to indulgent, refined pairings. It is a delight alongside noble seafood such as lobster or caviar-based preparations, as well as delicate white meats such as veal sweetbreads. It also pairs beautifully with shellfish, sushi or a platter of rich cheeses, revealing its density and freshness every time.
Serving and Cellaring
Les Coupés 1er Cru Blanc de Noirs 2021 is served chilled, at a temperature of approximately 8 to 10°C, whether as an aperitif or throughout a meal.
A 1er Cru Blanc de Noirs Shaped by the Sandy Terroirs of the Montagne de Reims
The Estate
Based in Écueil, on the Montagne de Reims, the house of Nicolas Maillart owes its present form to Nicolas Maillart who, in 2003, stopped supplying his grapes to the cooperative in order to develop his own range of Champagnes. An engineer and oenologist, he represents the ninth generation of a winegrowing family that has been established in the region for several centuries. The estate, covering approximately 15 to 16 hectares planted mainly with Pinot Noir, stands out for its sustainable viticulture, certified HVE level 3.
The Vineyard
The Les Coupés cuvée comes from a parcel of the same name, classified 1er Cru and located in Écueil, a village of the Montagne de Reims in Champagne. Planted in 1973 using massal selection and ungrafted, it lies on sandy soil with a chalky subsoil, at the foot of a south-facing slope. This rare configuration, which naturally protects the vines from phylloxera, gives the parcel an identity close to that of pre-phylloxera vineyards.
Vinification and Ageing
Les Coupés 1er Cru Blanc de Noirs 2021 is vinified in oak barrels and aged on its lees for approximately eight months. Malolactic fermentation is deliberately avoided in order to preserve the tension and freshness of the wine from this singular parcel.
