Tasting

Color
Brilliant and luminous, the color reveals delicate nuances reminiscent of lychee hues.

Nose
Expressive and generous, the bouquet opens onto a fruity palette blending citrus, exotic fruits and small red berries.

Palate
The attack is ample and silky, leading to a fleshy palate with lingering aromas of citrus and exotic fruits. The structure is solid, sustaining a long, savory finish.

Food Pairings

Ideal as an aperitif, this rosé pairs perfectly with a poke bowl combining salmon, shrimp, avocado and pomelo, a Lectoure melon with Bayonne ham, or a sea bream ceviche and grilled sea bass on the plancha.

The Estate

Located in the heart of the Côtes de Provence appellation, the Château Gassier embodies winemaking excellence and Provençal authenticity. The Terroir

Sourced from parcels in the Côtes de Provence Sainte-Victoire appellation area, Pas du Moine is made from vines rooted in clay-limestone soils, ensuring remarkable balance and freshness.

Winemaking and Aging

The grapes are harvested at night to preserve all their freshness. A direct pressing of 2 to 3 hours is carried out, followed by a cold settling for one week. Fermentation then takes place in concrete tanks to preserve the aromatic purity of the wine.

Syrah, Grenache, Cinsault and Rolle.
