The Terroir
Sourced from parcels in the Côtes de Provence Sainte-Victoire appellation area, Pas du Moine is made from vines rooted in clay-limestone soils, ensuring remarkable balance and freshness.
Winemaking and Aging
The grapes are harvested at night to preserve all their freshness. A direct pressing of 2 to 3 hours is carried out, followed by a cold settling for one week. Fermentation then takes place in concrete tanks to preserve the aromatic purity of the wine.
