The assured elegance of a Burgundian white wine

The Estate
Born from the alliance between two Burgundian families, the Domaine Bader-Mimeur embodies the heritage and expertise passed down through generations. Charles Bader, hailing from a family of wine merchants, united with Elise Mimeur, a descendant of Charles Mimeur, owner of the renowned Château de Chassagne-Montrachet. This union gave rise to a family estate where tradition and high standards go hand in hand.

The Vineyard
The vineyard spans 8 hectares in the appellation Chassagne-Montrachet, much of which surrounds the family château. Planted on clay-limestone soils, this terroir benefits from a privileged location. Chardonnay and Pinot Noir, emblematic varieties of Burgundy, are cultivated here with respect for natural balances, with particular attention paid to the vines and their environment.

Winemaking and Aging
The estate's wines are aged in vaulted cellars, in keeping with Burgundian traditions, to preserve the authenticity of the terroir and reveal the complexity of each cuvée.

Grape Variety
100% Chardonnay.

Color
The wine displays a clear color, a pale yellow with sparkling highlights.


Nose
Rich and expressive, the nose reveals aromas of white-fleshed fruits, accented by notes of mandarin, cream, and a hint of vanilla.

Palate
The palate delights with its generosity and structure. A fine aromatic intensity emerges, carried through to a persistent and elegant finish.

Food and Wine Pairings

This white wine of great finesse pairs perfectly with delicate dishes such as foie gras, sauced or grilled fish (trout, sea bass, salmon), premium shellfish (lobster, spiny lobster, prawns), as well as creamy poultry dishes or asparagus.

Serving

Serve between 13 and 14°C after aerating for about 20 minutes.
