Tasting
Colour
This white wine from France reveals a magnificent golden hue, ranging from pale to medium shades. Its clarity is brilliant, the result of a careful approach during bottling.
Nose
The aromatic bouquet reveals great complexity, blending scents of white flowers such as acacia and honeysuckle with aromas of ripe stone fruit like white peach and apricot. Delicate hints of hazelnut intertwine with a minerality typical of limestone terroirs.
Palate
On the palate, elegance and refinement take centre stage. The silky texture, brought by a long ageing on the lees, is perfectly balanced by a refreshing acidity that gives lovely liveliness to the whole. The fruity flavours perceived on the nose reappear, wrapped in a subtle richness, before stretching into a lingering finish with notes of toasted almond and sweet spices.
Food and wine pairing
This wine pairs wonderfully with noble shellfish such as lobster, prawns or langoustines, as well as with foie gras. It will also enhance white meats served with creamy sauces, mature goat's cheeses, or dishes with Asian influences such as a fish tagine or a seafood couscous.
Service and storage
With a solid structure and lovely acidity, this great white wine has excellent ageing potential and can be enjoyed until around 2038.

The estate
Founded in 1945 in the heart of the village of Fuissé, Domaine Cordier Père et Fils is a key reference in Burgundy. Since 1987, Christophe Cordier has led the estate, bringing a demanding and passionate vision. Under his direction, the estate stopped selling to merchants to focus exclusively on estate bottling. Spanning around thirty hectares divided into more than 120 plots, the estate stands out for its deep commitment to biodynamic viticulture and its meticulous plot-by-plot approach, aiming to express the quintessence of each terroir.
The vineyard
This Pouilly-Fuissé comes from a specific 1.80-hectare plot with an eastern exposure. The vines, aged between thirty-five and eighty years, thrive on clay-limestone soils dotted with white marl. The vineyard is managed with extreme rigour: short pruning, severe bud thinning and manual training of the foliage to preserve the plant's balance. Soil work is partly carried out using animal traction to preserve microbial life and avoid soil compaction.
Winemaking and ageing
Hand-harvesting allows for a rigorous selection of grapes at optimal ripeness. Vinification begins with a very gentle whole-bunch pressing. The juices are transferred by gravity to preserve their delicacy, and fermentation starts naturally thanks to indigenous yeasts. Ageing takes place on the lees for twenty-four months: a first year in 350-litre oak barrels, followed by a second year in stainless steel tanks. The wine is bottled by gravity, without fining and with extremely light filtration.
