Tasting notes
Colour
This white wine reveals a luminous hue with a deep golden-yellow tint.
Nose
Wonderfully complex, the aromatic bouquet exudes scents of ripe white fruits such as apple and pear, intertwined with delicate floral notes reminiscent of linden blossom and jasmine. Subtle touches of fresh butter and toasted hazelnut round out this olfactory ensemble.
Palate
Full-bodied and beautifully textured, the palate is perfectly balanced by a vibrant mineral tension. It unfolds flavours of dried apricot, almond and delicate citrus notes such as pink grapefruit and candied lemon. The finish, of remarkable length, stands out for its chalky character and mineral persistence.
Food and wine pairing
This cuvée pairs beautifully with delicate dishes. It will enhance roasted free-range poultry, white fish pan-seared in brown butter, or seafood served with a light creamy sauce.
Service and storage
To fully appreciate the complexity of the Chardonnay "En Quatre Vis" 2023, it is recommended to serve it at a temperature between 10 and 12°C.
The authentic expression of a great Jura wine from Domaine des Marnes Blanches
The estate
Founded in 2006 by Pauline and Géraud Fromont, two passionate oenologists, Domaine des Marnes Blanches quickly established itself as a leading reference in the Jura. Today, the two founders remain the owners and manage this twelve-hectare vineyard, spread across three villages in the Sud-Revermont, with unwavering dedication. Guided by an environmentally conscious philosophy, the estate favours organic farming and a minimalist approach in the cellar. This vision gives rise to authentic cuvées that express with great precision the full richness of their terroirs of origin.
The vineyard
Coming from a specific plot located in the village of Cesancey, this cuvée is produced from old vines around fifty years of age. Planted at an altitude of three hundred metres with a west-facing exposure, this distinctive terroir in the southern Côtes du Jura benefits from an ideal microclimate for slow berry ripening. The soils consist of white Liassic marls topped with a layer of limestone, providing excellent drainage and lending the grapes a distinctive minerality along with a fine natural acidity. The vineyard work is meticulous, the rows are grassed over, and the harvest is carried out by hand.
Winemaking and aging
True to the estate's minimalist philosophy, the creation of the Chardonnay "En Quatre Vis" 2023 begins with whole-bunch pressing to preserve the purity of the fruit. Fermentation starts spontaneously through the action of indigenous yeasts. The wine then undergoes a particularly long aging period of twenty-two months in neutral traditional demi-muids. This slow aging in wood refines the structure of the cuvée and harmoniously integrates its aromatic complexity.
Grape variety
100% Chardonnay.
