Tasting
Colour
The colour reveals a white hue with pale yellow and golden highlights, of a beautiful luminosity.
Nose
Highly complex, the bouquet opens with aromas of white fruits such as peach and pear, mingled with notes of citrus and white flowers such as honeysuckle. A pronounced minerality then emerges through touches of chalk and flint.
Palate
The attack is precise and taut, carried by a beautiful acidity. The mid-palate reveals an ample, dense texture, perfectly balanced by a saline minerality and a delicate oakiness. The long, linear finish stretches out on vibrant chalky notes.
Food and Wine Pairing
This wine pairs wonderfully with seafood such as oysters or scallops, as well as with delicate white fish. It also perfectly accompanies poultry in cream sauce, dishes based on seasonal vegetables such as asparagus or wild mushrooms, or aged pressed-curd cheeses such as Comté.
Service and Storage
For optimal tasting, it is recommended to serve this Chassagne-Montrachet 1er Cru "Les Chaumées" 2023 at a temperature between 10 and 12°C. This wine can be cellared to develop until around 2035.
The Mineral Elegance of a Great White Burgundy
The Estate
Founded in 1130 by Cistercian monks, the Domaine du Cellier aux Moines is a historic estate located in Givry, in Burgundy (France). After a long period of decline, the estate was purchased in 2004 by the Pascal family, who undertook extensive restoration work. Now run by Philippe and Catherine Pascal, alongside technical director Guillaume Marko, the vineyard spans around ten hectares. Certified in biodynamic farming, the estate stands out for its gravity-flow winery and its deep respect for terroir.
The Vineyard
The "Les Chaumées" climat is situated at altitude, in the northern part of the Chassagne-Montrachet appellation. The Chardonnay vines, over 30 years old, thrive on very shallow, highly calcareous soils mixed with fine clay particles. This demanding terroir, cultivated according to biodynamic principles, forces the roots to draw their nutrients from deep below, giving the wine an exceptional minerality.
The Vintage
The year 2023 offered very favourable weather conditions. The growing season benefited from adequate sunshine, well-distributed rainfall and stable temperatures. These elements allowed the grapes to reach optimal ripeness while preserving beautiful acidity.
Winemaking and Aging
The grapes for the Chassagne-Montrachet 1er Cru "Les Chaumées" 2023 are hand-harvested early in the morning. At the winery, which operates entirely by gravity, the berries undergo gentle pneumatic pressing followed by an overnight settling period. Fermentation takes place in French oak barrels, 25% of which are new. The wine then undergoes malolactic fermentation and is aged on fine lees for around 12 months with light lees stirring. The aging process concludes with four months in stainless steel tanks before bottling.
