Tasting

Colour
The colour reveals a beautiful red hue with deep cherry tones, enhanced by garnet highlights and a bright brilliance.

Nose
The aromatic bouquet opens with vivid notes of red fruits, such as raspberry and cherry. On aeration, it reveals a lovely complexity through delicate floral touches of violet and subtle spicy nuances.

Palate
The attack is round and enveloping, giving way to a generous mid-palate that expresses a fine fruit concentration, freshness and a mineral touch. The tannins, ripe and silky, integrate perfectly with a discreet acidity, leading to a long, persistent finish on red fruit and a texture of great smoothness.

Food and wine pairing

This wine pairs wonderfully with roasted poultry, characterful meats such as duck or goose, as well as feathered game. It also goes very well with pork-based dishes, such as a pork fillet with mustard cream sauce, beef dishes with mushrooms, or a soft-rind cheese platter featuring Brie de Meaux, Reblochon or Époisses.

The estate

Founded in the 11th century following the concession of the Moulin Foulot fief by Duke Robert I, the Domaine du Château de Meursault is an essential historic figure in Burgundy. Spanning 65 hectares at the heart of the Côte de Beaune, the estate has undergone numerous changes before being acquired in 2012 by Olivier Halley, its current owner. Under the direction of Stéphane Follin-Arbelet, the domaine stands out for its deep commitment to environmental preservation, illustrated by a complete conversion to organic farming and agroecological initiatives aimed at enhancing each terroir.

The vineyard

The plot classified as Premier Cru "Les Peuillets" is located in the commune of Savigny-Les-Beaune, at an altitude of 250 metres. Facing south to south-east on gentle slopes, the vines, some of which are over fifty years old, thrive on clay-limestone soils dotted with sandy elements. The vineyard is cultivated according to the traditional "en tâche" system, ensuring manual and individualised care throughout the year, in strict accordance with organic farming principles.

The vintage

The year 2023 stood out for its atypical climatic conditions, marked by high temperatures and strong sunshine. An early summer that was hot and dry, followed by an intense heatwave in August, led to an early ripening of the berries. These conditions required significantly moving up the harvest dates in order to preserve the freshness and balance of the grapes, ultimately resulting in a particularly generous harvest.

Winemaking and ageing

For this Savigny-Les-Beaune 1er Cru "Les Peuillets" 2023, the grapes are hand-harvested in small crates, followed by rigorous double sorting. Vinification begins with a three-day cold pre-fermentation maceration, before fermentation with indigenous yeasts punctuated by punching down and pumping over. After gentle pneumatic pressing, the wine is aged for 12 months in French oak barrels (25% new oak), then refined for three months in tanks before being bottled by gravity, in accordance with the lunar calendar.
