The property

Elected Best Young Sommelier of France at 21 years old, Hervé Bizeul falls in love with the magical landscapes of the majestic Vingrau circus, at the foot of the Eastern Pyrenees, in Roussillon. A restaurateur, writer and passionate about the land and the vine, Hervé Bizeul founded in 1997 with his wife the Domaine du Clos des Fées.

The Domaine du Clos des Fées has become over the vintages a reference among the most beautiful labels of Roussillon wines. Expressing the uniqueness of their terroir of origin, these exceptional cuvées seduce with their intensity and balance while presenting a great aging potential.

The vineyard

The cuvée Les Sorcières from the Domaine du Clos des Fées is a wine from the Côtes du Roussillon made from young mourvèdre and syrah vines as well as a selection of grenache and carignan from 40 to 80 years old, planted on clay-limestone soils.

Vinification and aging

Hand harvesting and sorting in the vineyard. Pre-fermentation maceration at low temperature accompanied by daily pumping over. Maceration takes place for 15 to 21 days with slow extraction, followed by the elimination of press ends. Malolactic fermentation is accompanied by racking in the air. The 8-month aging takes place in stainless steel tanks on fine lees.
