The estate
Founded in 2003 by Julien and Delphine Zernott, Domaine du Pas de l'Escalette has established itself as an essential benchmark in the Languedoc, in the south of France. Nestled between Millau and Montpellier, this family estate of around twenty hectares stands out for its strong environmental commitment, reflected in its organic and biodynamic certifications. The owners honour a long-standing winegrowing heritage, tending high-altitude vines with an artisanal approach. Renowned for the freshness and precision of its cuvées, the estate today embodies both the excellence and the revival of the region's great terroirs.
The vineyard
The grapes behind this white wine from IGP Pays de l'Hérault come from a singular high-altitude terroir, perched between 350 and 400 metres at the foot of the Larzac plateau. Divided into some fifty terraces, the vineyard lies on particularly free-draining limestone scree soils, bordered by traditional dry-stone walls known as clapas. Naturally irrigated by local springs and swept by cooling winds, the plots benefit from a cool microclimate. Vineyard management follows an approach that respects biodiversity, favouring gentle pruning to preserve the vitality of the old vines.
