Appearance
The wine reveals a pale yellow hue enhanced by delicate greenish highlights.
Nose
The aromatic bouquet opens with a lovely citrus freshness, blending lemon and light grapefruit, accompanied by floral notes of acacia. Subtle mineral and flinty hints round off this expressive nose.
Palate
The attack is lively and energetic, leading into a full palate structured by beautiful natural acidity. The tasting evolves through fruity flavours before extending into a linear, lemony and slightly saline finish, displaying remarkable persistence.
Food and wine pairings
This wine pairs beautifully with delicate dishes such as raw oysters, grilled langoustines or poached white fish like turbot. It also goes very well with roast poultry, a light risotto, or characterful cheeses such as Reblochon or Roquefort.
Serving and cellaring
For optimal preservation, it is recommended to store this Puligny-Montrachet "Village" 2024 in a cellar with a stable temperature between 10 and 13°C, away from light. This wine can be enjoyed now, but will continue to develop favourably and can be drunk until around 2032.
The elegance and mineral precision of a great Burgundy wine
The estate
Founded in the early 20th century by the grandfather of the current owner, Domaine Henri Boillot has established itself as an essential reference in Burgundy. Today run by Henri Boillot and his son Guillaume, the estate oversees a 13-hectare vineyard, ideally located in Meursault. Adopting a non-interventionist philosophy that respects the soils since the 1990s, the estate stands out for its constant pursuit of purity and elegance. The wines produced authentically reflect the richness of their terroirs, combining great technical precision with a deep respect for family traditions.
The vineyard
The terroir of Puligny-Montrachet, from which this wine originates, extends over brown limestone soils alternating with clay-limestone marl beds. The vines benefit from a privileged east and south-east exposure, planted at an altitude ranging between 230 and 320 metres. This complex geology gives the grapes a distinct identity, cultivated according to sustainable viticultural practices, without the use of herbicides, favouring mechanical work to preserve the natural balance of the ecosystem.
The vintage
The 2024 vintage is characterised by climatic conditions of very fine quality, offering remarkable freshness. The vegetative cycle enabled excellent phenolic ripeness to be achieved while retaining a healthy and balanced natural acidity, favouring early harvests between the end of August and the beginning of September.
Winemaking and ageing
The making of the Puligny-Montrachet "Village" 2024 begins with early harvests, followed by a gentle vertical pressing so as not to damage the berries. After a light settling, fermentation begins with a portion of the lees retained. Ageing then takes place without bâtonnage in 350-litre barrels, less than 10% of which are new, in order to limit oxidation and the imprint of oak. The wine thus rests for 11 months in barrels, complemented by 6 months in vat before bottling.
