Tasting
Colour
With a bright ruby hue, this wine reveals subtle black nuances.
Nose
With beautiful density and great floral purity, the aromatic bouquet exudes notes of red fruits, cherry stones and white pepper.
Palate
The attack is frank and clean, offering a pleasant texture. The palate reveals remarkable precision, supported by bright acidity and fine, chalky tannins. The whole expresses pure flavours of cherry and raspberry with elegance.
Food and wine pairing
This wine pairs wonderfully with offal such as liver or kidneys, feathered game, or roasted poultry. It also goes very well with pasta dishes, risotto, and cheeses such as brie or camembert.
Service and storage
To fully appreciate this Volnay 1er Cru "Les Fremiets" 2023, it is recommended to serve it at a temperature between 14 and 16°C, after a light decanting of one to two hours. This wine can be enjoyed young but will continue to develop favourably until around 2033.

The finesse and minerality of a Premier Cru from Volnay
The estate
The family's winegrowing history began in 1885. Ideally located in Meursault, at the heart of the Burgundy region, Domaine Henri Boillot has established itself as an essential reference. Now run by Henri Boillot and his son Guillaume, the estate operates both as a traditional domaine and as a merchant house. The estate stands out through a philosophy centred on sustainable viticulture, early harvests to preserve the freshness of the berries, and minimal intervention in the cellar, thus revealing the purity of its terroirs.
The vineyard
The "Les Fremiets" climat is located in the northern part of the Volnay appellation, bordering Pommard. Rising to an altitude of between 230 and 280 metres, this terroir rests on limestone soils crossed by bands of schist. The vines on this plot, averaging around forty years old, benefit from sustainable viticulture, with no chemical fertilisers or herbicides, in order to preserve the natural ecosystem of the soils.
The vintage
The year 2023 offered ideal summer conditions. The growing cycle was marked by periods of intense heat balanced by generous rainfall. This favourable weather allowed for optimal phenolic ripeness while retaining beautiful freshness, resulting in harvests that began in late August under perfect weather.
Winemaking and aging
The making of the Volnay 1er Cru "Les Fremiets" 2023 relies on whole-cluster vinification, retaining the stems during fermentation for a gentle extraction of colour and tannins. The wine is then aged in oak barrels, 50 to 70% of which are new, for approximately 18 months.
