The estate
Rooted since the 9th century in the viticultural history of Burgundy, the Domaine Laroche is an emblematic figure of Chablis. Purchased by the Advini group in 2009, it perpetuates a tradition of excellence by producing precise, elegant and expressive wines. The estate is committed to highlighting the identity of the Chablis climates through careful viticulture and custom vinifications.
The vineyard
The terroir from which this Premier Cru originates is distinguished by the richness of its soils: clay-limestone marls and layers of Kimmeridgian limestone, punctuated by typical marine fossils such as Exogyra virgula. This unique geology gives the wine a refined minerality and great complexity. Located in a more open valley, this Chablis vineyard benefits from optimal sunshine and soils capable of retaining heat, contributing to a homogeneous and qualitative maturity.
Vinification and aging
The harvest is carried out by hand, followed by meticulous sorting. After a slow and gentle pressing, only the finest juices are retained. The alcoholic and malolactic fermentations are largely carried out in French oak barrels, aged 1 to 7 years, and in stainless steel vats. The aging of this Chablis 1er Cru is carried out on fine lees, divided between stainless steel and wood, lasts 12 months, giving the wine texture and complexity.
