The property

An essential reference in Chablis, in Burgundy, the Domaine Laroche is particularly notable for its unique historical heritage dating back to the 9th century. Part of the Advini group since 2009, Domaine Laroche is recognised for the precision, elegance and aromatic richness of its wines, which authentically express the subtlety of the Chablis climates.

The vineyard

The Saint-Martin cuvée is a Chablis wine resulting from a rigorous selection of vineyards resting on Kimmeridgian soils rich in minerals and fossils, which gives the wine a distinctive minerality and deep aromatic complexity.

The vintage

The rigour of the winter in maintaining a good health of the vineyard gives way to a more clement spring and a summer whose heat ensures the optimal maturation of the berries.

Vinification and ageing

Harvested by hand, the grapes are rigorously sorted upon arrival at the winery. Low pressure pressing with separation of the juices and selection of press juices. Gentle extraction before alcoholic and malolactic fermentations in stainless steel tanks (85%) and French oak barrels (15%).
