Characteristics and tasting notes for the Pernand-Vergelesses 1er Cru "Fichots" 2022 Domaine Nicolas Rossignol
Tasting
Colour
Red in colour, this wine reveals a deep garnet hue with violet highlights.
Nose
Highly aromatic, the bouquet reveals scents of fresh red fruits such as strawberry and raspberry, accompanied by notes of violet and subtle spiced touches. With aeration, a mineral dimension emerges.
Palate
The attack is direct and fresh. The palate offers a precise, well-balanced structure, supported by smooth, well-integrated tannins. A lovely mineral tension harmonises with a rounded texture, leading to a lingering finish marked by a characteristic note of sloe.
Food and wine pairing
This wine pairs perfectly with grilled red meats, dishes in sauce or game such as pheasant. It also goes wonderfully with poultry, white meats with mushrooms, as well as mature cheeses such as Reblochon, Mont d'Or or Tomme de Savoie.
Service and storage
Destined for fine development, this Pernand-Vergelesses 1er Cru "Fichots" 2022 reveals its full potential after a few years in the cellar and can be kept for enjoyment until around 2032.
Other characteristics
This wine has an alcohol content of 13%. Made without fining or filtration, it preserves the full integrity of its natural components, which may result in slight turbidity.
The authentic expression of a Burgundy terroir by Domaine Nicolas Rossignol
The estate
Founded in 1997 in Burgundy, France, Domaine Nicolas Rossignol began with three hectares before expanding and merging in 2011 with the family-run Rossignol-Jeanniard estate. Now heading the property, Nicolas Rossignol, a fifth-generation winemaker, manages a seventeen-hectare vineyard spread across the Côte de Beaune. Drawing on his international experience, he favours a terroir-focused approach, applying sustainable farming methods and biodynamic principles to craft authentic wines.
The vineyard
Located in the northern part of the Côte de Beaune, the "Les Fichots" climat of the Pernand-Vergelesses appellation spans approximately 1.20 hectares. East-facing, on the mid-slope, the vines were planted in 1955 and 1958. They thrive on deep soils, low in limestone and rich in ferruginous clay. The vineyard is farmed without chemical products, with regular light ploughing of the soil.
The vintage
2022 stands out for its particularly hot, dry and sunny conditions. A water deficit early in the year was offset by heavy rainfall at the end of June, allowing the vines to weather the summer heat with ease. A little rain in late August completed the ripening of the grapes, resulting in a generous harvest of excellent quality.
Winemaking and ageing
The grapes for the Pernand-Vergelesses 1er Cru "Fichots" 2022 are hand-harvested, followed by a rigorous double sorting. Fermentation takes place using indigenous yeasts, with a gentle infusion-style maceration incorporating a proportion of whole bunches. The wine is then transferred by gravity for ageing on fine lees for fourteen to twenty months in French oak barrels, of which 15 to 25% is new wood. Malolactic fermentation is naturally delayed until spring. Bottling follows the lunar calendar.
