Tasting
Colour
The colour reveals a brilliant cherry-red hue, of moderate intensity, characteristic of its youth.
Nose
The aromatic bouquet opens with notes of black cherry and bramble fruit, enhanced by a stony minerality. With aeration, delicate floral fragrances reminiscent of violet and rose emerge.
Palate
The palate offers a silky texture and a harmonious structure where velvety tannins meet generous fruit. The mid-palate, of beautiful intensity, expresses mineral and earthy flavours, leading to a persistent, refined finish subtly marked by a touch of cherry stone.
Food and wine pairing
This red wine pairs wonderfully with Burgundian cuisine, particularly coq au vin, roasted poultry or feathered game such as quail and pigeon. It also perfectly complements dishes with wild mushrooms (porcini, chanterelles, morels) as well as aged hard cheeses such as Époisses.

The elegance and precision of a great red Burgundy
The estate
Founded in 1997 by Nicolas Rossignol, who comes from five generations of winegrowers, Domaine Nicolas Rossignol is a key reference in Burgundy. Initially comprising three hectares, the estate now spans around seventeen hectares across some thirty appellations, mainly in the Côte de Beaune. Current owner and winemaker Nicolas Rossignol crafts wines that faithfully express their terroir through sustainable viticulture, guided by the lunar calendar, and minimal-intervention winemaking.
The vineyard
The Volnay 1er Cru "Clos des Angles" comes from a triangular 1.80-hectare plot located on the southern edge of the appellation, bordering Pommard. East-facing and perched at around 250 metres in altitude, the vines, planted in 1941, 1955, 1986 and 2015, thrive on soils rich in clay and small gravel. The estate favours mechanical soil work without chemical herbicides and hand-picked harvests.
The vintage
2022 proved to be an exceptionally favourable year in Burgundy. Warm temperatures and optimal weather conditions allowed for perfect grape ripening. This favourable climate delivered a harvest combining generous yields with remarkable quality, preserving great freshness and a perfect balance.
Winemaking and aging
For this Volnay 1er Cru "Clos des Angles" 2022, the grapes are meticulously sorted on a vibrating table and then by hand. Fermentation is triggered by indigenous yeasts and lasts six to eight days, accompanied by gentle pumping-over or punching down. The wine is then transferred by gravity into oak barrels (with the proportion of new wood varying from 0 to 50%) for ten to twenty months of aging on fine lees, without racking. Malolactic fermentation is deliberately delayed until spring. Bottling takes place without fining or filtration.
