Tasting notes
Colour
The glass reveals a beautiful pale yellow hue, illuminated by bright golden highlights.
Nose
Wonderfully complex, the bouquet opens with aromas of white-fleshed fruits such as peach and pear, mingled with citrus notes. It then reveals delicate floral touches of hawthorn and acacia, underscored by subtle buttery and finely toasted nuances. With aeration, a beautiful minerality characteristic of the terroir emerges.
Palate
Broad and nuanced, the attack offers a lovely concentration carried by a refreshing tension. The texture is silky and refined, extending into a persistent, saline and delicately mineral finish.
Food and wine pairing
This white wine pairs perfectly with fish in sauce, seafood or shellfish. It also goes wonderfully with creamy poultry dishes, as well as goat's cheese or pressed cooked cheeses such as Comté.
Service and storage
To fully appreciate this Marsannay Village 2023, it is recommended to enjoy it at a temperature between 11 and 13°C. Approachable in its youth, its fine structure also allows it to develop favourably over the years in the cellar.
A great white Burgundy from Sylvain Pataille
The estate
Founded in 1999 from a single leased hectare, Domaine Sylvain Pataille is located in Marsannay-la-Côte, in Burgundy. Now overseeing a vineyard of around twenty hectares, Sylvain Pataille is a leading figure in the region. Also a consulting winemaker, he cultivates his vines according to biodynamic principles. The estate stands out for its philosophy of minimal intervention, aiming to express the authenticity and purity of its terroirs with great precision.
The vineyard
Located within the Marsannay appellation, the true golden gateway to the Côte de Nuits, the vineyard rests on a mosaic of clay-limestone soils. The estate favours rigorous soil management and controlled yields to ensure optimal grape quality while preserving biodiversity.
The vintage
The year 2023 was marked by contrasting weather conditions that required constant vigilance in the vineyards. Nevertheless, the season achieved a fine balance thanks to optimal ripening conditions at the end of the cycle, yielding white grapes of great aromatic freshness.
Winemaking and aging
The grapes are hand-harvested. Pressing is gentle, followed by barrel fermentation with indigenous yeasts. Aging takes place in oak barrels on fine lees, lending complexity and richness to the wine, before bottling with minimal intervention.
