Tasting notes

Colour
This white wine from France reveals a beautiful chromatic depth, marked by a brilliant golden hue subtly highlighted by greenish reflections at the edges of the glass.

Nose
Remarkably complex, the aromatic bouquet opens with scents of well-ripened stone fruit such as peach and apricot, refreshed by touches of citrus. The expression of the terroir comes through in mineral and stony nuances, complemented by delicate notes of white flowers, pear and subtle buttery touches.

Palate
The attack reveals a balanced structure with a light-to-medium profile. A lovely acidic tension energises a rich, ripe material with flavours of candied apricot and orange. The dry, concentrated finish lingers on mineral notes and gentle spices reminiscent of saffron.

Food and wine pairing

This Pinot Gris "Clos des Capucins" pairs wonderfully with regional specialities such as tarte flambée or a well-aged Munster cheese. It also elegantly accompanies foie gras, seafood, grilled sea bass or roast poultry with herbs. Its fruity notes and lovely acidity even allow it to enhance lightly spiced Asian dishes.

The pure and mineral expression of a great Alsace terroir

The estate

Founded in 1612 by Capuchin monks, Domaine Weinbach is a true institution in Alsace. Acquired as national property in 1898 by the Faller family, it established itself as a pioneer of biodynamic viticulture in the region. Today, Catherine Faller, supported by her two sons Théo and Eddy Leiber-Faller, passionately runs this 38-hectare estate. The estate distinguishes itself through its commitment to producing wines exclusively from its own vines, guaranteeing complete control and impeccable quality in every cuvée.

The vineyard

The wine comes from the famous Clos des Capucins, a historic five-hectare monopole located at the heart of Alsace. This unique terroir rests on soils composed of sandy silt over granite pebbles, a geological configuration that favours early ripening of the grapes. All the vines are cultivated according to the strict principles of biodynamic farming, with regular ploughing and the use of natural preparations to stimulate soil life and strengthen the plant's defences.

The vintage

The year 2024 was marked by particularly wet weather conditions. Unlike the previous year, excessive rainfall punctuated the growing cycle, from flowering through to the start of summer, leading to strong fungal pressure and a significant drop in yields. However, these weather challenges resulted in remarkably clear berries, avoiding any overconcentration linked to heat.

Winemaking and aging

Following an entirely manual harvest, the berries destined for the Pinot Gris "Clos des Capucins" 2024 are whole-bunch pressed gently and gradually. The must settles naturally before undergoing a slow alcoholic fermentation driven exclusively by indigenous yeasts. This process takes place in large old oak foudres. The wine is then aged for around eight months in old wood, before being bottled without any prior fining.
