Tasting notes
Nose
The bouquet opens with subtle aromas of small red fruits, evoking strawberry and raspberry, accompanied by spicy notes of nutmeg and cinnamon. Earthy touches of undergrowth and damp leaves enrich this aromatic palette.
Palate
The palate reveals a silky texture, carried by remarkably fine tannins and a perfectly balanced acidity that brings great freshness. Flavours of ripe red fruits harmonise with light notes of mushrooms and a subtly toasted oak character, stretching towards a long and harmonious finish.
Serving and ageing
To allow the aromas to fully express themselves and the tannins to soften, decanting for at least two hours before serving is highly recommended. This Pinot Noir "Jardin aux Oiseaux" 2023 has excellent ageing potential and can be kept in the cellar for optimal tasting between approximately 2030 and 2040.
Food and wine pairings
This Pinot Noir "Jardin aux Oiseaux" pairs masterfully with roasted poultry, such as herb-roasted chicken or rare-cooked duck. It also matches perfectly with feathered game, slow-cooked meats and mushroom-rich dishes, such as a forest risotto or truffle pasta. As for cheeses, it enhances pressed varieties such as Comté or Gruyère, as well as aged bloomy-rind cheeses, while pairing ideally with a fine charcuterie board.

The estate
Formally founded in 1612 by Capuchin monks, the property was acquired by the Faller family in 1898, marking the beginning of its modern renown. Located in Alsace, at the foot of the Schlossberg hill, Domaine Weinbach today extends over 38 hectares farmed biodynamically. Currently led by Catherine Faller, supported by her sons Théo and Eddy, the estate upholds a philosophy of minimal intervention and absolute respect for the terroir. This historic institution is renowned worldwide for the excellence of its cuvées.
The vineyard
Acquired by the estate in 2019, the Vogelgarten terroir lies mid-slope with an ideal full southern exposure in Alsace. Nestled between the famous parcels of Mambourg and Furstentum, these vines grow on singular soils composed of oolitic limestone and iron. The entire vineyard is cultivated according to biodynamic principles, with short pruning practised to naturally control yields.
The vintage
Weather conditions were marked by strong humidity. Persistent spring rainfall, with a particularly wet month of May, shaped the vegetative cycle, influencing the natural concentration and richness of the berries for this harvest year.
Vinification and ageing
The grapes are harvested exclusively by hand to preserve the integrity of the bunches. The vinification of this Pinot Noir "Jardin aux Oiseaux" includes half whole-bunch grapes. The process begins with a cold maceration of up to one week, followed by a traditional maceration of around fourteen days during which fermentation starts spontaneously thanks to indigenous yeasts. After malolactic fermentation, the wine is carefully aged in used Burgundy barrels, refining its structure without marking the juice with excessive oaky aromas.
