Tasting
Colour
The wine shows an intense ruby-red colour, brilliant and limpid, revealing a beautiful depth of colour.
Nose
The nose is complex and expressive, driven by ripe black fruits such as blackberry, blackcurrant and plum, intermingled with touches of red fruits such as redcurrant and cherry. Mineral nuances, a hint of liquorice, some floral and minty accents, and subtle toasty notes from the ageing complete this bouquet.
Palate
The attack is supple and fresh before giving way to a full, elegant structure. The ripe, well-integrated tannins are supported by an acidity that brings definition to the whole, leading to a long finish marked by black fruits, a few spicy notes and well-integrated oak.
Food and Wine Pairings
This wine is an ideal match for grilled or roasted red meats, slow-cooked dishes and game. It also pairs very well with Iberian charcuterie and meats, such as Iberian pork tenderloin, as well as with aged hard cheeses.
Serving and Cellaring
The Reserva 2021 is best served between 16 and 18°C. Decanting beforehand is recommended to allow the wine to open up fully and reveal its entire aromatic complexity.
A Red from Ribera del Duero Shaped by Limestone and the Tempranillo of Hacienda Monasterio
The Estate
Hacienda Monasterio was born in 1990, when the Dane Peter Sisseck settled in Ribera del Duero, in Castilla y León, to run the bodega and plant the vineyard. He has since overseen its technical direction, alongside Carlos de la Fuente, winemaker since 1992. Located between Pesquera de Duero and Valbuena de Duero, on the Milla de Oro, the estate covers 167 hectares, including 108 hectares of vines farmed under certified organic agriculture. Hacienda Monasterio has established itself as one of the founding estates of the region's qualitative renaissance.
The Vineyard
The vineyard from which this wine comes extends over south-facing slopes, in the heart of the Ribera del Duero appellation. The soils, heterogeneous but marked by a strong predominance of limestone, give the grapes finesse and elegance. The vines, trained in double Guyot and planted at a high density of around 4,000 vines per hectare, benefit from deliberately limited yields, within the framework of organic viticulture certified by CAECYL, with no use of herbicides, pesticides or chemical fertilisers.
Winemaking and Ageing
In keeping with the style of the Reserva cuvée, the Reserva 2021 is crafted from hand-harvested grapes, fermented with indigenous yeasts in temperature-controlled stainless steel tanks. The wine then benefits from extended ageing in French oak barrels, in line with the method applied by the estate for this cuvée, designed to develop structure, complexity and ageing potential.
Grape Varieties
The Reserva 2021 is composed mainly of Tempranillo (Tinto Fino), complemented by a significant proportion of Cabernet Sauvignon, a blend characteristic of the Reserva cuvée from Hacienda Monasterio.
