Description

Tasting Notes and Serving Tips for For Her 2016 from L'Aventure

Tasting

Color

The color reveals a deep red hue with intense highlights.

Nose

Explosive, the nose opens with aromas of blue and black fruits, accompanied by floral notes of violet. Subtle oak nuances round out this complex bouquet.

Palate

On the palate, this wine charms with its broad attack and velvety texture. The palate unveils a core of ripe, succulent fruit, supported by fine, elegant tannins. The finish lingers with persistence, reflecting remarkable structure and refined balance.

Food and Wine Pairing

This wine is an ideal match for grilled or braised red meats, notably lamb and beef prepared with aromatic herbs. It also pairs perfectly with game dishes or Spanish-style preparations featuring chorizo and slow-cooked meats.

Serving and Cellaring

For Her 2016 can be enjoyed now, but it will gain in complexity with a few additional years of cellaring. For optimal tasting, it is recommended to serve it after proper storage conditions, away from light and temperature fluctuations.

A Full-Bodied and Complex Wine from Paso Robles

The Estate

Founded in 1998 by Stephan Asseo and his wife Béatrice, L'Aventure embodies the boldness of a French winemaker who left Bordeaux to explore the creative possibilities offered by California. Established on 51 hectares in the Santa Lucia Mountains in Paso Robles, the estate is now run by Chloé Asseo-Fabre, who joined the family business in 2014 and has served as CEO since 2021. L'Aventure has established itself as a benchmark for high-end Californian wines, recognized for its unique philosophy blending Bordeaux and Rhône traditions. The estate also stands out for its environmental commitment, notably thanks to a solar system ensuring complete energy self-sufficiency.

The Vineyard

The vineyard for For Her 2016 benefits from the exceptional terroir of Paso Robles, located on the region’s west coast. The vines thrive on marine-origin limestone schist soils, rich in fossils and minerals, which give the grapes remarkable concentration. The proximity of the Pacific Ocean generates significant temperature swings between day and night, encouraging optimal ripening while preserving the fruit’s natural freshness. This unique combination of geological and climatic factors makes it possible to obtain grapes of exceptional quality.

Winemaking and Aging

For Her 2016 illustrates L'Aventure’s innovative approach to winemaking. The grapes are co-fermented using a reimagined traditional French technique, allowing the different grape varieties to interact from the fermentation stage to create harmonious integration. This method, which Stephan Asseo compares to a successful marriage, enables the varieties to enhance one another. Aging takes place partly in French oak barrels and in alternative vessels, preserving the purity of the fruit while adding structure and complexity.
