Tasting
Appearance
The wine displays a pale yellow hue with golden and green highlights, clear and bright.
Nose
The nose is initially discreet and elegant, then reveals upon aeration a remarkable minerality accompanied by notes of flint. Aromas of white fruits express themselves with finesse, evoking citrus, green apple and pear, enhanced by floral touches of white flowers.
Palate
The attack on the palate is harmonious and dense, with a refined texture marked by distinct salinity and minerality. The palate reveals ripe yellow fruits supported by fresh, energetic acidity. The finish lingers at length, highlighting the mineral imprint characteristic of the Kimmeridgian terroir.
Food and wine pairings
This Chablis 2018 pairs ideally with oysters and seafood, grilled or simply prepared shellfish. It also matches beautifully with poached or meunière-style white fish, herb-roasted poultry, as well as fresh and mild soft cheeses.

A Chablis 2018 true to the typical minerality of Burgundy
The estate
Founded on 1 May 1923 under the impetus of Abbé Balitrand, La Chablisienne is today led by Damien Leclerc, who took over as general manager in 2009. This cooperative cellar brings together approximately 250 to 300 winegrower members and manages around 1,250 hectares of vineyards, representing nearly a quarter of the total production of the Chablis appellation. Recognised for its commitment to sustainable viticulture, La Chablisienne was awarded the White Wine Producer trophy at the International Wine and Spirit Competition in 2024. The cooperative also stands out for its acquisition in 1999 of the prestigious Château Grenouilles, an emblematic Grand Cru of the region.
The vineyard
This Chablis comes from plots located in the heart of the appellation, on clay-limestone soils composed of Kimmeridgian marls dating from the Jurassic period. These geological formations, rich in ancient oyster fossils, give the wine its highly characteristic minerality. The region's semi-continental climate, marked by cold winters and dry summers, contributes to the precise aromatic expression and pronounced acidity of the wines of Burgundy.
The vintage
The 2018 vintage proved particularly generous for the Chablis region. Following an exceptionally wet winter that replenished water reserves, spring saw a rapid start to the vegetative cycle despite a few frost threats in May. Summer was characterised by high temperatures and marked drought from July to September, with sunshine well above seasonal norms. These conditions enabled optimal ripening of the grapes, harvested under favourable weather, producing fruit of exceptional sanitary quality and lovely aromatic concentration.
Winemaking and aging
The grapes for this Chablis 2018 were vinified according to the cooperative's traditional methods, receiving the musts directly after pressing. Fermentation took place in temperature-controlled stainless steel tanks, thereby preserving the aromatic freshness and mineral purity of the wine. Aging for approximately twelve months in steel tanks made it possible to maintain the frank expression of the terroir without any oak influence, favouring the vivacity and minerality characteristic of the appellation.
