The estate

Established in 1929 and classified as a Cru Classé des Côtes-de-Provence since 1955, the Maison Sainte Marguerite now spans more than 450 hectares of vineyards, representing the largest Cru Classé vineyard area within the AOC. Acquired in 1977 by Jean-Pierre and Brigitte Fayard, the estate is now led by Olivier Fayard as CEO and chief winemaker, alongside his brother Enzo Fayard, who oversees viticulture. Since 2022, the property has been jointly owned by Pernod Ricard (majority stake) and the Fayard family (minority stake). Certified organic since 2003 by Ecocert and labeled by the Vegan Society, the château stands out as the only Cru Classé des Côtes-de-Provence offering a fully organic and vegan range. The estate practices massale selection, a rare approach in Provence that preserves the vineyard’s genetic diversity.

The vineyard

Château Sainte Marguerite "Symphonie" 2025 comes exclusively from the estate’s vineyards located in La Londe and Pierrefeu, within the Côtes de Provence appellation. The estate benefits from exceptional geographical diversity, stretching over 25 kilometers across twenty distinct plots between Toulon and Saint-Tropez. Soils vary depending on the parcel, including schist, clay, flint fragments, and limestone. Proximity to the Mediterranean creates a beneficial microclimate characterized by mild winters and exceptional sun exposure, giving the wines a subtle saline quality. The Mistral, which blows regularly, contributes to vine health by reducing the risk of fungal diseases.

The vintage

The 2025 vintage in Provence was characterized by a rainy spring followed by a bright and generous summer. This climatic pattern accelerated grape ripening compared to previous years.

Winemaking and aging

Château Sainte Marguerite "Symphonie" 2025 is crafted using methods that respect organic principles. Harvesting is carried out mainly at night to preserve the wine’s characteristic freshness. After picking, the grapes are quickly transported to the winery located just five minutes away to minimize oxidation. Cold skin maceration takes place under controlled temperature, followed by gentle pressing using pneumatic presses that preserve delicate flavors. Fermentation occurs in temperature-controlled stainless steel tanks. The wine is then aged on fine lees before undergoing fining and filtration to ensure its final purity.
