Description
A Sancerre white wine with an alluring elegance and balance
The estate
In 1987, Pascal Jolivet, a former sales agent within the Pommery Champagne House, founded his own estate in Sancerre. Since the production of his first vintage in 1991, Pascal Jolivet has gradually expanded his estate. He now reigns over 95 hectares of vines that spread between Pouilly-Fumé, Touraine, Sancerre and Pouilly-sur-Loire.
The vineyard
This wine by Pascal Jolivet is a Sancerre wine that stems from the vineyards located in the communes of Bué, Verdigny, Saint Satur and Sainte Gemme. These terroirs are unique in that they are composed of limestone (50%), clay-limestone (30%) and flint (20%).
Vinification and ageing
Following the harvest, the grapes are sorted by hand. The grapes are vatted by gravity flow, lightly pressed and then the free-run juice and the pressed juice are kept. Vinification by plot in temperature-controlled stainless steel vats.
