Tasting
Appearance
This wine reveals a beautiful pale gold colour, illuminated by delicate green highlights typical of its youthful character.
Nose
The aromatic bouquet is particularly intense. It releases deep mineral and gunflint notes, harmoniously complemented by citrus aromas and subtle hints of white flowers.
Palate
The attack is lively and offers superb tension. The body unfolds with precision before reaching a finish that is at once chalky, tangy and delicately iodised.
Food and wine pairings
This cuvée pairs wonderfully with seafood and oysters. It also enhances grilled or poached fish, as well as white meats and poultry served with a creamy or lemony sauce.
Serving and ageing
To fully appreciate this Chablis 1er Cru "Côte de Léchet" 2022, it is recommended to serve it chilled at a temperature between 10 and 12°C. Endowed with fine ageing potential, it can be enjoyed until around 2027.

The estate
Founded in 1840 by Jean Febvre, the Simonnet-Febvre estate is a historic institution located in Chablis, in Burgundy. Originally renowned for its sparkling wines, it now belongs to Maison Louis Latour and is led by Paul Espitalié. The estate cultivates around twenty hectares and stands out for its production of Crémants de Bourgogne crafted according to the traditional method. Combining respect for tradition with modernity, the property is strongly committed to organic farming while working towards the revival of the historic Auxois vineyard.
The vineyard
The vines that give rise to this cuvée flourish on the left bank of the Serein, in the heart of the Chablis appellation. With an average age of 35 years, they benefit from a fine south-east exposure. The terroir consists of poor, stony clay-limestone soils dating from the Kimmeridgian period. These demanding geological conditions naturally limit yields and encourage early ripening of the berries, thereby ensuring optimal concentration.
The vintage
The year 2022 was generally marked by warm weather conditions in the northern part of the region. This climate required particular attention in the vineyard to preserve the perfect balance between the ideal ripeness of the fruit and the freshness that is essential to the identity of the local wines.
Winemaking and ageing
To craft this Chablis 1er Cru "Côte de Léchet" 2022, the berries undergo careful vinification in stainless steel vats. Fermentation is rigorously controlled at temperatures ranging from 17 to 21°C. The wine then benefits from twelve months of ageing on lees, which gives it greater roundness and aromatic complexity.
