Tasting
Appearance
This wine reveals a beautiful pale yellow hue, illuminated by golden highlights that can sometimes show greenish tints in its youth.
Nose
The aromatic bouquet displays great complexity, blending citrus scents such as lemon and orange with white fruits like pear and apple. Delicate floral touches intertwine with notes of honey and sweet spices, particularly cinnamon. The whole is enhanced by a deep mineral imprint reminiscent of flint and oyster shell.
Palate
The attack is straightforward and unveils a generous, ample and powerful matter. The texture proves particularly dense and concentrated, perfectly balanced by a lively acidity that brings solid structure. The mid-palate expresses dazzling minerality, leading to a persistent finish marked by elegant salinity.
Food and wine pairings
This Chablis Grand Cru "Les Clos" will pair wonderfully with noble fish, whether simply grilled or coated with a creamy sauce. It will also brilliantly accompany grilled white meats or those cooked with cream and mushrooms, as well as refined shellfish.
Serving and cellaring
To fully appreciate this 2022 vintage, it is advisable to serve it at a temperature between 12 and 14°C. Endowed with excellent ageing potential, this wine can be cellared and enjoyed until around 2034.

The estate
Founded in 1840 by Jean Febvre, Maison Simonnet-Febvre is a historic institution of Burgundy, located at the heart of the Chablis appellation. Acquired in 2003, its current owner is Maison Louis Latour, while management is entrusted to Paul Espitalié. The estate cultivates a vineyard of approximately three hectares spread across prestigious terroirs. This house stands out for its growing commitment to organic farming and its uniqueness: it is the only Chablis producer to craft Crémant de Bourgogne.
The vineyard
The climat from which this wine originates is the largest and one of the most illustrious of the Grands Crus of the Chablis appellation. Historically planted before the year 1267, these lands take their name from the old stone walls that once surrounded these prestigious plots. The vines, aged between 35 and 40 years, thrive on Kimmeridgian clay-limestone soils, rich in marine fossils. They benefit from an ideal exposure facing south and south-west, allowing for controlled yields of around 54 hectolitres per hectare.
The vintage
The 2022 year stood out for climatic conditions that promoted an excellent level of berry ripeness. This growing cycle allowed the grapes to develop a beautiful aromatic concentration while preserving natural freshness and optimal acidity, ensuring great ageing potential.
Winemaking and ageing
The crafting of this Chablis Grand Cru "Les Clos" 2022 begins with alcoholic fermentation carried out at 65% in temperature-controlled stainless steel tanks, while the remaining 35% ferments in oak barrels aged three to five years. The wine then benefits from ageing on fine lees lasting 15 to 18 months, while maintaining the same proportions: the majority in stainless steel tanks to preserve mineral tension, and the rest in oak barrels to bring complexity without masking the terroir.
