Tasting notes
Colour
The wine shows a pale yellow to light golden hue, enhanced by brilliant, luminous highlights.
Nose
The nose opens with generous aromas of ripe white fruit, such as pear and peach, mingled with notes of candied citrus. The whole is enriched by subtle touches of hazelnut and fresh butter, along with a minerality reminiscent of gunflint.
Palate
The attack is ample, revealing a creamy, dense texture. The mid-palate, supported by vibrant acidity, unveils flavours of white peach and candied lemon, leading to a taut finish of remarkable length and great salinity.
Food and wine pairings
This great white wine pairs wonderfully with oven-baked white fish, seafood such as pan-seared scallops, or white meats in a creamy mushroom sauce. It is also a perfect match for hard cooked-curd cheeses such as Comté.
Serving and cellaring
The Pouilly-Fuissé Village "Les Combes Vieilles Vignes" 2025 has excellent ageing potential, allowing it to evolve harmoniously in the cellar for approximately 8 to 15 years.
The pure expression of a great white Burgundy by Verget
The estate
Founded in 1990 by the Belgian couple Jean-Marie Guffens and Maine Heynen, the House of Verget has established itself as an essential reference in France, and more particularly in Burgundy. Based in Sologny, in the northern Mâconnais, this winery stands out for its "haute couture" négociant model, built exclusively on the purchase of grapes. Still run today by Jean-Marie Guffens, supported by cellar master Julien Desplans, the estate is renowned for its extremely precise winemaking, which earned it the title of "Négociant of the Year" in 2020.
The vineyard
This wine comes from the lieu-dit Les Combes, located at the foot of the Roche de Vergisson within the Pouilly-Fuissé appellation. This exceptional terroir rests on clay-limestone soils. The particularly old vines were planted between 1917 and 1953. They benefit from a dual exposure: a majority facing south for optimal ripeness, complemented by a significant share facing north, providing the freshness essential to the balance of the berries.
Vinification and ageing
To craft the Pouilly-Fuissé Village "Les Combes Vieilles Vignes" 2025, the grapes are harvested by hand with rigorous successive sortings. Only the free-run juice is kept after a gentle pressing. The slow fermentations, carried out with indigenous yeasts, take place in French oak barrels (approximately 25% of which are new). The wine is then aged on fine lees for seven to eight months, with moderate lees stirring, in order to develop its texture and aromatic complexity.
