Tasting
Appearance
This wine reveals a beautiful ruby-red colour with garnet highlights typical of its grape variety, hinting at a slight brick-toned evolution at the rim of the glass.
Nose
The bouquet is highly complex. It blends primary aromas of small red and black fruits, tart cherry and faded rose with spicy notes. Over time, more evolved hints of chocolate, undergrowth and truffle emerge.
Palate
Both rich and powerful, the palate offers a harmonious, vigorous texture. The excellent acidity is perfectly balanced by ripe, structuring tannins. This multifaceted wine lingers on a persistent finish marked by spicy and balsamic nuances.
Food and wine pairings
This cuvée pairs wonderfully with roasted or grilled red meats, as well as rich dishes in sauce. It will also enhance game such as venison or wild boar, and makes an ideal partner for aged hard cheeses or regional specialities such as beef braised in red wine.
Serving and ageing
This Barolo 2022 is built for very long ageing and can develop beautifully in bottle for over fifteen years. If enjoyed in its youth, decanting is recommended to soften its structure. It is best served at a temperature between 16 and 18°C.
The elegance and power of a Piedmont wine by Ceretto
The estate
Officially founded in 1937, the Ceretto estate is a true institution based in Alba, in the heart of Piedmont. Now run by the Ceretto family, with Alessandro Ceretto as technical director, the estate spans 160 hectares of vines. A pioneer in showcasing single crus as early as the 1960s, this iconic house stands out for its strong environmental commitment, having obtained organic certification in 2015 and applying biodynamic principles. The estate thus brilliantly combines the scale of a major house with the rigour of terroir-driven viticulture.
The vineyard
The vines dedicated to this classic Barolo cover around 4 hectares spread across several prestigious communes of the appellation: Barolo, Castiglione Falletto, La Morra, Monforte d'Alba and Serralunga d'Alba. The plots, often located on steep slopes facing south to south-east, display great geological diversity, combining marls, clays, limestone and friable soils. The entire vineyard is farmed according to biodynamic principles and certified organic, ensuring full respect for the environment and biodiversity.
Winemaking and ageing
The grapes are harvested by hand in early October, then destemmed and meticulously sorted. Fermentation begins spontaneously with indigenous yeasts in steel tanks, with submerged-cap maceration lasting around two weeks, without temperature control. A post-fermentation maceration of 10 to 15 days extracts structure and aromas. This Italian wine is first aged for 12 months in 300-litre oak barrels, then for 12 months in 25-hectolitre casks. After blending, the wine rests for a further 18 months in steel tanks before bottling.
