Nose

Food and wine pairings

This Château Canon 2001 pairs perfectly with a duck breast with blueberries, creating a harmony between the fruity aromas of the wine and the tart flavors of the blueberries. It also wonderfully accompanies a beef fillet with duck foie gras, establishing a balance between the richness of the foie gras and the tannic structure of the wine.

A refined and elegant Saint-Émilion

The property

Nestled on the limestone plateau of Saint-Émilion, the Château Canon has been writing its history since 1760, when the corsair Jacques Kanon became its owner. Acquired by the Chanel House in 1996, the estate has since undergone extensive restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon is now one of the major references of its appellation, praised for the finesse and elegance of its wines.

The vineyard

Spread over 32 hectares, 20 of which are in one piece, the Château Canon vineyard occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at an altitude of 87 meters, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer valuable protection against spring frosts.

The vintage

The year 2001 was marked by a mild and wet winter, followed by a spring that was first cool in April, then mild and dry. The summer alternated between showers and heat, while the fall offered beautiful sunny days accompanied by cool nights. The harvest took place from October 2 to 5 for the merlot and October 5 and 6 for the cabernet franc, under optimal conditions.

Vinification and aging

For the Château Canon 2001, the vinification is parcel by parcel with gravity filling in double-walled, thermoregulated stainless steel truncated vats. The flow is also by gravity. The malolactic fermentation is carried out for a third in new barrels and two thirds in vats. The aging lasts 18 to 20 months with 60% new barrels.

Grapes

Merlot and cabernet franc, according to the traditional grape variety of Saint-Émilion.
