The estate
Nestled at the heights of the limestone plateau of Saint-Émilion, Château Canon enjoys an exceptional location. Located on the right bank of Bordeaux, the superb estate takes its name from the famous sailor and corsair of the King, Jacques Kanon. It was in 1954 that Château Canon became a Premier Grand Cru Classé of Saint-Émilion.
The vineyard
Château Canon 2021 is a Saint-Emilion wine that stems from a 24-hectare vineyard whose vines are 30 years old on average and planted on clay-limestone soils.
The vintage
After experimenting for several years, 2021 marks the first year of conversion towards organic farming. The estate aims to obtain the certificate in 2024. The vineyard was not affected by frost or bad weather throughout the growing season. The progressive and homogeneous maturation process gives a perfect phenolic balance and a good acidity.
Vinification and ageing
Hand-picked in crates. Manual sorting. Vinification by plot, vatting by gravity-flow in thermo-regulated stainless steel truncated cone-shaped vats. Gravity run-off. Malolactic fermentation. Aged for 16 to 18 months in barrels (50% new).
The blend
2021 is the fruit of an exclusive blend comprising all of the estate’s classified Premier Grand Cru parcels.
Merlot (71%)
Cabernet Franc (29%).

The tasting
Nose
The nose is lively and combines fruity fragrances (raspberries, strawberries) with subtle peaty notes.
Palate
Firm and very precise, the palate is seduced by notes of orange blossom and a refreshing hint of almond. Fresh and well balanced, the palate combines fruity, floral, vegetal and smoky aromas.
