Tasting
Color
The color is a deep ruby red.
Nose
Expressive and delicate, the bouquet reveals floral notes of fresh violets, accompanied by mineral nuances reminiscent of flint. The fruity aromas focus on ripe raspberries and black cherries, enriched by a touch of wild herbs and subtle spices.
Palate
The attack is characterized by tension and vibrancy. The medium-bodied structure offers a silky and fluid texture, supported by brilliant acidity. Fine and delicate tannins accompany a lively and elegant finish.
Food and wine pairing
This cuvée pairs perfectly with spicy braised dishes, served with crunchy vegetables and legumes.
Service and storage
The Euziéra 2023 is ideally served at a temperature between 16 and 17°C. This wine can be enjoyed now and will continue to evolve until around 2034 or beyond.
A Terrasses du Larzac red wine full of finesse and elegance
The estate
Founded in 2017 in Argelliers in the heart of the Terrasses du Larzac in Languedoc, Clos Constantin spans 15 hectares of vineyards. Pierre Halley, a winemaker trained in Montpellier and California, and Samuel Durand, a sommelier from a winemaking family in Sancerre, manage this estate, named in honor of Constantin, Pierre's great-grandfather. Certified organic since 2021, the estate relies on a cool, sheltered terroir benefiting from significant temperature amplitude, as well as a minimalist approach in the cellar, favoring spontaneous fermentation and aging in tanks.
The vineyard
Euziéra stems from the Font-Belette lieu-dit, a natural amphitheater at an altitude of 230 meters in the Terrasses du Larzac appellation. The cool climate of this location preserves the freshness of the grapes. The clay-limestone soils host Syrah and Carignan, while the Grenache plots thrive on sandy soils. The name of the cuvée refers to the holm oak forests (in Occitan) that line the estate's vineyards.
Winemaking and aging
Harvesting is done by hand. Vinification of the Euziéra 2023 is carried out using indigenous yeasts following a plot-by-plot approach: the Grenache is only pumped over, while Syrah and Carignan are vinified in co-fermentation. Aging lasts for 12 months in concrete tanks. The wine is not filtered before bottling.
