Tasting
Appearance
Of absolute delicacy, the wine reveals an extremely pale pink hue, reminiscent of rose petals and cherry blossoms.
Nose
The nose displays remarkable finesse with delicate aromas of white cherry blossom, citrus, and white-fleshed fruits such as peach and pear.
Palate
On the palate, this rosé expresses freshness and generosity with a complexity characteristic of great wines. The structure is built on the grape’s natural acidity, creating an elegant, lingering finish, supported by subtle bitter notes and a measured salinity that harmonize the whole.
Food and wine pairings
This Clos Peyrassol pairs ideally with grilled fish with herbs, notably line-caught sea bass marinated in olive oil and enhanced with a light sauce. It also pairs perfectly with rich cured meats such as Italian lardo, whose richness is balanced by the wine’s freshness and salinity. Seafood, butter- or light cream-based preparations, as well as fine cheeses, also make excellent pairings.

An exceptional rosé from Provence with a delicate and complex character
The estate
Founded in 1204 when Count Alphonse II of Provence donated the estate to the Knights Templar, the Commanderie de Peyrassol boasts nearly eight centuries of winemaking history. Acquired in 2001 by Philippe Austruy, the estate extends over 850 hectares, including 95 hectares of vineyards in Côtes de Provence, surrounded by oak and pine forests. Under the direction of Alban Cacaret, the owner’s nephew, the estate obtained organic certification in 2023. Peyrassol also stands out for its significant open-air contemporary art collection and its Michelin-starred restaurant, making the estate a major cultural and gastronomic destination in Provence.
The vineyard
Clos Peyrassol comes from an exceptional plot located at the foot of the Templar buildings, surrounded by dry-stone walls that create a unique microclimate. This outstanding terroir rests on Triassic clay-limestone soils with a high proportion of gravel, at the heart of a natural sinkhole. The vines benefit from an altitude ranging between 220 and 350 meters, protected by the surrounding forest which forms a natural amphitheater limiting maritime humidity. This privileged geographical location in the foothills of the Massif des Maures, within the Côtes de Provence appellation, allows for grapes of great aromatic finesse.
The vintage
The year 2025 was marked by contrasting climatic conditions, requiring constant attention in the vineyards. After a mild winter, spring provided the necessary water reserves before giving way to a hot, dry summer. The temperature differences between day and night at the end of the cycle allowed the berries to retain good acidity while reaching optimal phenolic ripeness. The harvest took place under the best possible conditions, yielding musts of great aromatic purity.
Winemaking and aging
The harvest for Clos Peyrassol 2025 is carried out at sunrise to preserve the maximum freshness of the grapes. After gentle pneumatic pressing and careful juice separation, traditional vinification takes place in temperature-controlled stainless steel tanks, complemented by temperature-controlled sandstone jars. Extended aging on fine lees allows for close contact between the wine and the yeasts, naturally developing aromatic complexity and balance on the palate. This patient approach encourages the expression of the delicate and fresh characteristics that distinguish this exceptional rosé.
