Tasting
Colour
Deep red in colour, this wine displays remarkable intensity and an almost opaque appearance.
Nose
The aromatic bouquet, complex and expressive, exudes scents of black fruits such as plum, black cherry and blackcurrant. It also opens onto spicy notes, liquorice, along with subtle touches of dark chocolate and toasted oak.
Palate
This red wine stands out for its supple texture and fullness. The tannins, while present and structuring, are ripe and velvety. Generous flavours of stewed fruit come through, supported by a lovely natural freshness that stretches the finish with elegance.
Food and wine pairing
This characterful wine pairs perfectly with grilled or sauced red meats, game, as well as hearty stews. It will beautifully complement a traditional cassoulet or dishes seasoned with spices and black pepper.
Service and storage
For optimal enjoyment of the Les Combettes 2022, it is recommended to serve it at a temperature between 16 and 18°C, taking care to aerate it for about twenty minutes before serving. Boasting excellent aging potential, this wine deserves a few more years in the cellar and can be enjoyed until around 2032.

The estate
Founded in 2006, Domaine Anne Gros & Jean-Paul Tollot is the result of a partnership between two Burgundian winemakers. Located in Cazelles, in the Languedoc in France, the estate spans approximately 14 hectares. Still run today by Anne Gros and Jean-Paul Tollot, the estate was chosen for its altitude, which provides cool temperatures. The property distinguishes itself through its ambition to produce wines that combine Mediterranean generosity with the precision typical of Burgundy, while showing the utmost respect for the terroir.
The vineyard
Produced under the IGP Pays de l'Hérault Côtes du Brian, this wine comes from vines that were around five years old at harvest. The vineyard sits at an altitude of 200 metres, similar to that of Vosne-Romanée, allowing for slow ripening of the berries. The vines grow on soils of fine clay-limestone. The vineyard is managed through sustainable farming, favouring environmentally friendly practices and limiting chemical intervention, with harvesting carried out entirely by hand.
The vintage
The year 2022 was marked by extreme weather conditions, with intense heat and severe drought from June to August. Fortunately, the abundant rainfall of the previous winter and spring helped build up vital underground water reserves for the vines. This dry climate naturally protected the vineyard from fungal diseases, resulting in a harvest in impeccable health and a growing cycle that led to optimal ripening of the berries.
Winemaking and aging
For the Les Combettes 2022 cuvée, the grapes are entirely destemmed following Burgundian tradition. Fermentation takes place in temperature-controlled stainless steel tanks, using exclusively indigenous yeasts. After settling for at least 48 hours and blending the free-run and press juices, the wine is aged entirely in new French oak barrels, allowing for regular oxygenation that refines its structure.
