The estate
Founded in 1945, Domaine Cordier Père et Fils now spans more than 31.5 hectares across 120 plots in nine villages throughout the Mâconnais. Led by Christophe Cordier, the estate is renowned for its commitment to organic and biodynamic viticulture, certified since 2024. The estate’s philosophy is based on controlled yields, hand-harvesting at optimal ripeness, and careful aging on fine lees, which lends the wines richness and texture.
The vineyard
The Climat "Les Crais" is located in the commune of Davayé, within the Saint-Véran appellation. This terroir is characterized by very limestone-rich, stony soils, the term "crais" referring to chalk. This particular geological composition gives the wines a pronounced minerality and a distinctive tension that defines the identity of this plot.
The vintage
The 2020 vintage in Burgundy benefited from exceptional weather conditions. Following a mild, wet winter, the growing season started early under sunny skies. From June through the end of the season, hot and dry conditions prevailed, making 2020 the driest year since 1945. The early harvest, carried out in August, helped preserve naturally high acidity while achieving optimal ripeness. The vintage thus offers sun-kissed yet perfectly balanced white wines.
Winemaking and aging
Saint-Véran Village "Les Crais" 2020 is vinified with indigenous yeasts, using a plot-by-plot approach that respects the terroir. Aging takes place on fine lees for about 18 months in oak barrels, giving the wine its creamy texture and aromatic complexity. Bottling is carried out by gravity, without fining and with minimal filtration, in order to preserve the wine’s integrity.
