Tasting
Colour
Clear and bright, the colour reveals a pale yellow hue enhanced by delicate green highlights.
Nose
The aromatic bouquet stands out for its great subtlety, blending white fruit aromas such as peach and pear with fresh citrus notes. Floral touches of acacia intertwine with a minerality reminiscent of flint, complemented by a truly distinctive ferrous imprint.
Palate
Generous and full-bodied, the palate offers a perfect balance between tension and minerality. The bright, precise acidity carries the wine through to a remarkably fresh and long finish.
Food and wine pairing
This white wine pairs wonderfully with fine shellfish such as lobster or prawns, as well as grilled fish served with a creamy sauce. It also enhances roasted poultry, oysters, and hard cheeses such as Comté.
Service and storage
Endowed with excellent aging potential, the Saint-Véran Village "Les Crais" 2023 can be enjoyed until around 2035.
The authentic expression of a great Mâconnais terroir
The estate
Founded in France in 1945 in the village of Fuissé, Domaine Cordier Père et Fils is a key figure in southern Burgundy. This roughly thirty-hectare vineyard is divided into numerous plots. Led since 1987 by Christophe Cordier, the estate abandoned its négociant activities to focus exclusively on developing its own land. A staunch advocate of sustainable viticulture, the current owner guided the estate toward organic certification in 2024, while also applying the principles of biodynamics. A meticulous approach that reveals the full richness of the terroirs.
The vineyard
This wine comes from the Saint-Véran appellation, located in the southern part of the region. More specifically, the vines are rooted in the historic Les Crais sector, in the commune of Chasselas. Rising to around 300 metres in altitude, this terroir benefits from an ideal south-facing exposure for grape ripening. The soils consist of a distinctive clay-limestone blend, marked by the presence of iron oxide, which gives the wine its particular mineral identity.
The vintage
The year 2023 offered highly favourable climatic conditions. This vintage stands out for its beautiful sun-drenched richness and optimal berry ripeness, allowing for wines with lovely natural acidity and a solid structure.
Winemaking and aging
The creation of the Saint-Véran Village "Les Crais" 2023 begins with gentle whole-cluster pressing. The juices are then gravity-fed into barrels to limit mechanical intervention. Aging spans a total period of 18 months, starting with a year in 350-litre barrels, before finishing with six months in stainless steel tanks. The wine rests on its full lees, enhancing its complexity. Bottling is done by gravity, without fining and with extremely light filtration.
