Tasting
Colour
This wine reveals a deep, intense ruby red colour. Over time, the rim shows subtle brick and orange hues, while the core retains a beautiful intensity.
Nose
Particularly intense and complex, the bouquet opens with aromas of small red berries, blackberry and plum jam. It then evolves towards indulgent notes of mocha and chocolate, enhanced by touches of spice, truffle, undergrowth and a delicate smoky imprint.
Palate
The attack reveals a structure that is both broad and tight-knit. The wine is carried by refined, silky, velvety tannins. The whole is perfectly balanced, combining power and finesse, with a lingering finish marked by mineral, smoky and liquorice nuances.
Food and Wine Pairing
This great red wine pairs wonderfully with roasted or braised meats, such as a herb-crusted rack of lamb or a beef fillet served with root vegetables. It will also enhance feathered game and poultry, such as guinea fowl stuffed with mushrooms, as well as long-aged hard cheeses like a mature Comté.
Serving and Cellaring
To fully enjoy the Domaine de Chevalier 2003, it is recommended to serve it at a temperature of 16 to 18°C and to decant it gently. Having reached its peak of maturity, this vintage should be enjoyed until around 2025.
The Elegance of a Great Growth from Pessac-Léognan
The Estate
A true gem of the Bordeaux region, Domaine de Chevalier was truly established in 1865 by Jean Ricard. Now run by Olivier Bernard and the Bernard family, the estate spans around a hundred hectares, of which 70 hectares are devoted to vines. Nestled at the heart of a forest clearing, this iconic estate stands out for its environmental commitment and its conversion to biodynamic farming. By showcasing the excellence of its terroir, Olivier Bernard also helps spread the reputation of the Bordeaux name across the world, producing wines celebrated for their remarkable finesse.
The Vineyard
Located within the Pessac-Léognan appellation, the vineyard dedicated to red wines covers around 60 hectares. The vines, with an average age of 35 years, benefit from a high planting density reaching 10,000 vines per hectare. They thrive on poor soils made up of black sands and fine white gravel, resting on an alios subsoil. The immediate forest environment creates a unique microclimate that shields the vines from extreme temperatures, thus promoting optimal grape ripening while preserving a lovely freshness.
The Vintage
2003 was marked by extreme weather conditions, with an exceptional heatwave and severe summer drought. Despite these historic temperatures, the estate's great terroir allowed the vines to adapt remarkably well. Thanks to deep rooting into the gravel, the quality of the clay soils and excellent water supply, the growing cycle was able to unfold under favourable conditions, preserving the natural acidity and freshness of the berries.
Winemaking and Ageing
The hand-picked harvest undergoes a rigorous triple sorting in the vineyard, on whole bunches and then on individual berries. For the Domaine de Chevalier 2003, alcoholic fermentation took place in temperature-controlled stainless steel and coated steel vats. The wine was then matured meticulously for 18 months in barrels, with lees stirring, allowing the tannic structure to soften and the oak notes to integrate subtly.
