Dark, round and full-bodied. Lots of dark chocolate. Dense and rounded. Dark-roasted coffee bean. This wine conveys more ambition. The tannins are coarse-grained. A good, easy-drinking wine. Not serious—better slightly chilled, with structure.

The estate

An essential reference for great Loire wines, the Domaine de la Butte embodies excellence and respect for the terroir. Founded in 2002 by the talented Jacky Blot, then taken over by his son Jean-Philippe, the estate has established itself as a master in the art of enhancing cabernet franc, revealing all the finesse and aromatic complexity of the Bourgueil terroirs.

The vineyard

The Haut de la Butte is a Bourgueil wine from a 6-hectare plot facing due south, located at the top of the estate. Planted about 25 years ago, the vines benefit from a soil rich in limestone, flint and silica, giving the grapes a unique mineral expression.

Vinification and aging

The harvest is carried out manually, with meticulous sorting carried out directly on a table at the end of the row. After careful destemming, fermentation mainly takes place in wooden vats, accompanied by moderate punch-downs and daily pump-overs. No yeast addition or chaptalization is practiced. Maceration lasts about three weeks, followed by malolactic fermentation in wooden vats. The aging is then carried out in barrels: one third of one-wine barrels, one third of two-wine barrels, and one third of three-wine barrels.
